Description

These soft cinnamon and orange muffins are a real comfort food, perfect for breakfast or a delicious snack. The recipe is very simple and quick to prepare with the Thermomix®. The aroma of cinnamon blends perfectly with the freshness of the orange zest, creating a combination of flavors that will conquer everyone. I love them warm, perhaps accompanied by a steaming cup of tea. They keep well for a couple of days, but I doubt they will last that long! Try them, they are irresistible and ideal for an afternoon treat or a Sunday brunch with the family.

Ingredients (12 ingredients)

  • 0.75 cup butter or margarine
  • 0.5 cup sugar
  • 2 piece large eggs
  • 1 tbsp rum
  • 1 tsp vanilla extract
  • 3 tbsp milk
  • 0.5 tsp cinnamon
  • 2 tsp baking powder
  • 2.25 cup flour
  • 0.25 cup chopped almonds
  • 1 tbsp grated orange peel
  • 0.25 cup raisins

Preparation (7 steps)

Butter and sugar in cream

Thermomix® Setting
2 min/Speed 3

Insert butter or margarine and sugar into the bowl. Work for 2 Min./Stufe 3 until a homogeneous cream is obtained.

Eggs, rum, vanilla and milk

Thermomix® Setting
1 min/Speed 3

Add the eggs, rum and vanilla extract and milk. Mix for 1 Min./Stufe 3.

Flour and yeast

In a separate bowl, mix the flour, cinnamon and baking powder. Add the flour mixture to the butter mixture in the bowl.

Final dough

Mix everything in the bowl for 30 Sec./Stufe 4.

Adding extra ingredients

Add the chopped almonds, grated orange peel and raisins. Gently mix with the spatula to blend the ingredients.

Pour into the mold

Pour the mixture into a muffin mold, filling it halfway.

Baking in the oven

Bake in a preheated oven at 190°C for 25-30 minutes, or until golden brown.
