Description

These savoury muffins are an explosion of Mediterranean flavours! Black and green olives blend perfectly with the strong taste of gorgonzola, creating an irresistible combination. Perfect for a delicious aperitif, a Sunday brunch or as a savoury snack to take with you. Preparation is quick and easy, thanks to my trusty Thermomix®. I love them warm, freshly baked, but they are also excellent cold. Try them, you won't regret it! You can also vary by adding dried tomatoes or diced cooked ham for an extra touch.

Preparation of the olives

Drain the black and green olives from their preserving liquid, rinse them briefly under running water and halve them. Set aside.

Preparation of the dough

In the Thermomix bowl, insert the eggs, a pinch of salt and the milk. Mix for 20 Sec./Stufe 4.

Addition of liquid ingredients

Add the butter at room temperature and the extra virgin olive oil. Mix for 10 Sec./Stufe 3.

Incorporation of dry ingredients

Add the sifted flour and the instant baking powder. Mix for 30 Sec./Stufe 4.

Addition of olives and gorgonzola

Thermomix® Setting
15 Sec./Linkslauf Speed 2 Reverse

Add the halved olives and the crumbled gorgonzola. Mix gently for 15 Sec./Linkslauf Stufe 2, using the spatula to mix everything together.

Baking in the oven

Preheat the oven in static mode to 200°C. Butter the muffin tins and pour the freshly prepared mixture into each tin, up to 3/4 full. Transfer the muffins to the oven and bake for about 25 minutes.

Cooling and serving

After the cooking time has elapsed, take the muffins out of the oven, let them cool briefly and serve.
