Description

This hearty red cabbage and potato casserole from the Thermomix® is a vegetarian main course with fresh red cabbage, apples and potatoes. Apple vinegar and red wine provide a fine acidity. Preparation takes about 110 minutes and yields 6 servings. Ideal as a warming family meal in winter or as a festive side dish for Christmas.

Ingredients (17 ingredients)

  • 800 g Red cabbage (fresh)
  • 100 ml Apple vinegar
  • 1 Prise(n) Sugar
  • Salt
  • 1 Onion
  • 2 Apples
  • 50 ml Olive oil (mild)
  • 100 ml Red wine
  • 50 ml Orange juice
  • 2 TL Gingerbread spice
  • 150 ml Soy cooking cream
  • Pepper
  • 800 g Potatoes (predominantly waxy)
  • Grated nutmeg
  • 3 EL Hazelnut kernels chopped
  • 3 EL Breadcrumbs
  • 1 EL Nutritional yeast

Preparation (10 steps)

Prepare red cabbage

Cut or shred 800 g red cabbage (fresh) into very fine strips, cutting out the stalk. Mix the cabbage in a large bowl with 45 ml apple vinegar, 1 pinch of sugar and 1 tsp of salt and knead vigorously with your hands for about 2 minutes. Leave to stand for 15 minutes.

Prepare onion and apples

Peel 1 onion and cut into cubes. Wash, peel and core 2 apples and also cut into small cubes.

Sauté onion

Put 2 tbsp olive oil (mild) in the mixing bowl and sauté for 3 Min./120°C/speed 1.

Sauté red cabbage

Add the prepared red cabbage and sauté for 5 Min./120°C/Reverse speed 1, pushing it down with the spatula.

Simmer red cabbage

60 min/212°F/Linkslauf Speed 1 100 Reverse

Add 55 ml apple vinegar, 100 ml red wine, 50 ml orange juice and 300 ml water and season with 2 tsp gingerbread spice, salt and pepper. Stir in the apple cubes and simmer covered for 60 Min./100°C/Reverse speed 1. If necessary, add a little more water in between.

Refine red cabbage

Stir in 100 ml soy cooking cream and heat for 5 Min./90°C/Reverse speed 1. Season with salt and pepper.

Cook potatoes

25 min/Varoma/Speed 1 Varoma

While the red cabbage is simmering, wash, peel and dice 800 g potatoes (predominantly waxy) and place in the simmering basket. Add 1 liter of water to the mixing bowl, insert the simmering basket and cook for 25 Min./Varoma/speed 1.

Prepare mashed potatoes

After cooking, remove the simmering basket and collect the cooking water. Put the potatoes back into the mixing bowl. Add 50 ml cooking water, 50 ml soy cooking cream, 30 ml olive oil (mild), salt, pepper and grated nutmeg and process into a coarse mash for 20 Sec./speed 4.

Layer casserole

Preheat the oven to 180 °C top and bottom heat. Place the red cabbage evenly in a casserole dish (approx. 25 x 20 x 5 cm). Spread the mashed potatoes over it.

Bake casserole

Mix 3 tbsp hazelnut kernels chopped, 3 tbsp breadcrumbs and 1 tbsp nutritional yeast and sprinkle over the casserole. Bake in the oven for about 20 minutes until golden brown.
