Description

This baked hake recipe is a simple and delicious way to enjoy a healthy Mediterranean-inspired meal. I love how the flavors of the tomatoes, olives, capers, and anchovies infuse the hake fillets, creating a flavorful and satisfying dish. It's perfect for a weeknight dinner or a casual weekend brunch. The preparation is quick and easy, making it a great option for busy cooks. Feel free to add other vegetables like bell peppers or zucchini for extra flavor and nutrients. This dish is also naturally gluten-free and can be easily adapted to be dairy-free.

3

Prepare the potatoes

While the sauce is cooking, halve or quarter the baby potatoes, depending on their size. Place the potatoes in a roasting dish.

4

Combine sauce and potatoes

Pour the sauce from the mixing bowl over the potatoes in the roasting dish. Mix well to coat the potatoes evenly.

5

Add the hake fillets

Nestle the hake fillets on top of the potato and vegetable mixture in the roasting dish. Season the hake fillets with salt and pepper.

6

Bake the traybake

Cover the roasting dish with foil and bake in a preheated oven at 220°C (200°C fan) for 25-30 minutes, or until the potatoes are tender and the fish is cooked through.

7

Garnish and serve

Remove the foil and scatter the chopped parsley over the traybake. Serve immediately.
