Description

I love preparing this fresh pasta with porcini mushrooms! It's a comforting dish, perfect for autumn when porcini mushrooms are at their peak. The intense flavor of dried porcini mushrooms, reduced to powder and incorporated into the dough, gives a unique and delicious taste. The dough is easy to work with and the texture is just perfect. This homemade pasta is ideal for a meal with family or friends. It can be accompanied by a cream and mushroom sauce for an even more gourmet dish. A real treat, and so much tastier than industrial pasta!

Ingredients (5 ingredients)

  • Salt or fine salt
  • 3 c. à s. Olive oil
  • 100 g Dried porcini mushroom
  • 6 piece Eggs
  • 500 g Flour

Preparation (6 steps)

Reduction of porcini mushrooms into powder

Thermomix® Setting
20 sec/Speed 10

Put the 100 g of dried porcini mushrooms in the Thermomix bowl and mix for 20 Sek./Stufe 10 to obtain a fine powder.

Preparation of the dough

2 min/Kneading speed

Add the porcini mushroom powder, the 500 g of flour, the 6 eggs and 3 pinches of salt into the Thermomix bowl. Add 2 tablespoons of hot water. Mix for 2 Min./Knetstufe until obtaining a homogeneous dough.

Resting of the dough

Remove the dough from the Thermomix, form a ball and let it rest for at least one hour at room temperature.

Shaping the pasta

Divide the dough into small balls. Roll out each ball on a floured work surface with a rolling pin until you obtain a thickness of about 1 mm, or use a pasta machine by gradually reducing the thickness of the rollers. Flour the surface and roll the sheets of dough to cut them into strips of a few millimeters according to your taste.

Cooking the pasta

In a large saucepan, bring salted water to a boil. Immerse the pasta in boiling water. As soon as they rise to the surface, retrieve them with a skimmer and place them in a dish.

Service

Add a little olive oil, butter and grated cheese on the pasta before serving.
