Description

I love preparing this homemade fresh pasta! It's so much more flavorful than store-bought dry pasta. The recipe is simple and quick, perfect for an impromptu meal. Semolina provides a slightly firmer texture and a subtle taste. Serve with homemade tomato sauce or fresh pesto for an authentic Italian dish. This pasta is ideal for a family lunch or dinner with friends. Feel free to vary the shapes using different accessories for your pasta machine. A real delight!

Ingredients (4 ingredients)

  • 20 cl water
  • 2 piece eggs
  • 150 g semolina
  • 500 g flour

Preparation (6 steps)

Mixing the dry ingredients

Thermomix® Setting

Pour 500 g of flour and 150 g of semolina into the Thermomix bowl. Mix for 10 Sek./Stufe 3.

Adding the wet ingredients and kneading

Thermomix® Setting
3 min/Kneading speed

Add 20 cl of water and 2 whole eggs into the Thermomix bowl. Knead for 3 Min./Knetstufe.

Resting the dough

Remove the dough from the Thermomix, form a ball, wrap it in film and place it in the refrigerator for 30 minutes.

Preparing the pasta by machine

Cut the ball of dough into 4 slices. Take out the pasta machine and pass each slice through the space designed at N° 1. Repeat the maneuver 2 times. Pass to N° 3, then to 5 to finish at 6.

Shaping the pasta

Place the stretched dough on a clean paper towel. Do the same with the other 3 slices. Then, pass each plate through the tagliatelle machine or others.

Cooking the pasta

Cook the pasta immediately in boiling salted water. The cooking time depends on the thickness of the pasta.
