Description

This nut cake is a simple and comforting delight, perfect to accompany a coffee or a tea. I often prepare it in autumn, when the nuts are at their peak. The recipe is easy to make with the Thermomix®, which allows to obtain a homogeneous dough and a soft texture. The secret lies in the softened butter and the freshly crushed nuts. A real pleasure for the taste buds, ideal for a gourmet snack or a family dessert. You can also add a touch of cinnamon for a warmer flavour. A cake that smells of home and childhood memories!

Ingredients (6 ingredients)

  • 180 g icing sugar or caster sugar
  • 3 piece eggs
  • 100 g walnut kernels
  • 100 g flour
  • 100 g softened butter
  • 1 packet vanilla sugar

Separation of the eggs

Separate the whites from the yolks of 3 eggs. Reserve the whites in a clean, dry container.

Mixing the egg yolks, sugar and butter

In the Thermomix bowl, add the egg yolks, 180g of icing sugar or caster sugar and 100g of softened butter. Mix for 20 Sek./Stufe 4.

Crushing the nuts

Add 100g of walnut kernels to the Thermomix bowl and crush them for 5 Sek./Stufe 5. Check the consistency and extend if necessary.

Adding the dry ingredients and nuts

Add 1 sachet of vanilla sugar, the 100g of crushed walnut kernels and 100g of flour in the Thermomix bowl. Mix for 15 Sek./Stufe 3.

Whisking the egg whites until stiff

Insert the whisk into the Thermomix bowl. Add the reserved egg whites and whisk them until stiff peaks form for 3 Min./Stufe 3.5.

Folding in the egg whites

Remove the whisk. Gently fold the egg whites into the mixture in the Thermomix bowl using the reverse function for 10 Sek./Linkslauf Stufe 2. Use the spatula to help mixing.

Baking in the oven

Pour the contents of the bowl into a round mold or several small individual muffin molds. Bake at 180°C for 45 minutes in a preheated traditional oven.
