Description

This apple speculaas dessert from the Thermomix® is a wintery sweet dish with apples, speculaas, and a mascarpone-cream-cream. Refined with cinnamon and hazelnuts, it is a delicious layer dessert for the Christmas season. The preparation takes about 25 minutes and yields 6 servings. Ideal as a light dessert or for the festive coffee table.

Ingredients (9 ingredients)

  • 4 Stück Apples
  • 100 ml Apple juice
  • 1 TL Cinnamon
  • 12 Stück Spice Speculaas
  • 200 g Whipping cream
  • 200 g Mascarpone
  • 1 Pck. Bourbon Vanilla sugar
  • 3 EL Chopped hazelnuts
  • 3 EL Flaked almonds

Preparation (8 steps)

Prepare apples

Peel, core and cut the apples into approx. 1 cm cubes. Set aside the prepared apple cubes.

Cook apple compote

15 min/212°F/Speed 1 100

Place the apple cubes and apple juice in the mixing bowl and cook for 15 min./100°C/speed 1 until the apples are soft.

Spice and cool apple compote

Thermomix® Setting
5 sec/Speed 2 Linkslauf Reverse

Add the cinnamon to the apple compote in the mixing bowl and stir in for 5 sec./speed 2 reverse. Then transfer the apple compote to a bowl and let it cool completely.

Chop Speculaas

Thermomix® Setting
8 sec/Speed 5

Put the spice speculaas in the mixing bowl and chop for 8 sec./speed 5. Transfer the speculaas crumbs.

Whip cream until stiff

Thermomix® Setting
2 min/Speed 3.5

Insert the butterfly. Pour the whipping cream into the mixing bowl and whip until stiff for 2 min./speed 3.5. Remove the butterfly and transfer the cream.

Prepare mascarpone cream

Thermomix® Setting
20 sec/Speed 3

Put the mascarpone and bourbon vanilla sugar in the mixing bowl and stir for 20 sec./speed 3. Carefully fold in the whipped cream with a spatula.

Layer dessert

Spread the speculaas crumbs on the bottoms of six dessert glasses. Fill with a layer of fried apple compote. Then pour the mascarpone cream over the compote.

Garnish dessert

Garnish the mascarpone cream with chopped hazelnuts, flaked almonds and a pinch of cinnamon. Refrigerate the dessert until ready to serve.
