Description

This Greek salad with chicken breast is a light and protein-rich main course, ideal for warm summer days. The preparation is straightforward and quickly done thanks to the Thermomix®. The salad combines fresh vegetables such as iceberg lettuce, cucumber, tomatoes and bell pepper with spicy feta and juicy fried chicken breast. The dish is rounded off with a homemade tomato sauce and a refreshing balsamic dressing. Perfect for a low-calorie and healthy meal.

  • 200 g Chicken breast fillet
  • 100 g Iceberg lettuce
  • 150 g Cucumber
  • 150 g Cherry tomatoes
  • 75 g Bell pepper, red
  • 75 g Feta
  • 0.5 Stück Red onion
  • 1 Zehe Garlic clove
  • 400 g Passata
  • 1 EL Tomato paste
  • 3 EL Balsamic vinegar
  • 6 EL Olive oil
  • 0.5 TL Oregano
  • 0.5 TL Salt
  • 0.5 TL Mustard
  • 1 Prise Pepper
  • 1 Prise Sugar

Preparation (8 steps)

Prepare onion and garlic

Peel and halve 1/2 red onion (approx. 50g) and place 1 clove of garlic in the mixing bowl and chop for 3 sec./speed 5. Use the spatula to push down.

Sauté onion and garlic

Add 2 tbsp olive oil to the chopped onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add tomato paste

Add 1 tbsp tomato paste and sauté for 1 min./120°C/speed 1.

Add passata and spices

Add 400 g passata, 1/2 tsp oregano, 1/2 tsp salt, 1 pinch of pepper and 1 pinch of sugar to the mixing bowl and cook for 10 min./100°C/speed 1 without the measuring cup.

Prepare salad dressing

In a separate bowl, mix 3 tbsp balsamic vinegar, 3 tbsp olive oil, 1/2 tsp salt, 1 pinch of pepper and 1/2 tsp mustard with the Thermomix: 10 sec./speed 3.

Fry chicken breast

Fry 200 g chicken breast fillet in a separate pan with a little olive oil until cooked and lightly browned. Then cut into bite-sized pieces.

Arrange salad

Put 100 g iceberg lettuce, 1/2 cucumber (approx. 150g), 150 g cherry tomatoes, 1/2 bell pepper red (approx. 75g), 75 g feta and the fried chicken breast in a bowl. Pour the prepared salad dressing over it and mix carefully: 10 sec./reverse rotation speed 2.

Add tomato sauce

Pour the tomato sauce from the mixing bowl over the salad and serve.
