Description

These oatmeal raisin cookies are a delight for any time of day. The combination of crunchy oatmeal with the sweetness of the raisins makes them irresistible. Perfect to accompany morning coffee or as a healthy afternoon snack. The recipe is very simple and quick to prepare with the Thermomix®, ideal for those days when you fancy something sweet and homemade. In addition, they are an excellent option to include fiber in the diet. Go ahead and try them, you'll love them!

Ingredients (9 ingredients)

  • 100 gramos butter
  • 100 gramos sugar
  • 1 piece egg
  • 1 cucharadita vanilla essence
  • 80 gramos rolled oats
  • 120 gramos flour
  • cinnamon powder
  • 3 gramos baking powder
  • 1 pinch salt

Preparation (6 steps)

Cream the butter and sugar

Thermomix® Setting
30 sec/Speed 4

Place 100 grams of butter at room temperature and 100 grams of sugar in the Thermomix glass. Mix for 30 seconds at speed 4.

Incorporate the egg and vanilla

Thermomix® Setting
15 sec/Speed 3

Add 1 egg and 1 teaspoon of vanilla essence to the glass. Mix for 15 seconds at speed 3.

Add the dry ingredients

Thermomix® Setting
20 sec/Speed 4

Add 80 grams of rolled oats, 120 grams of flour, cinnamon powder to taste, 3 grams of baking powder and 1 pinch of salt to the glass. Mix for 20 seconds at speed 4. Use the spatula to help integrate the ingredients.

Incorporate the raisins

Add the raisins (amount to taste) to the glass. Mix gently with the spatula to distribute them evenly in the dough.

Shape the cookies

Preheat the oven to 175°C. With a spoon, take portions of dough and form the cookies on a baking tray covered with baking paper or a silicone mat. Flatten slightly with the back of the spoon.

Bake the cookies

Bake the cookies for approximately 20 minutes or until golden brown. Remove from the oven and let cool on a wire rack before serving.
