Description

I love starting the day with an extensive brunch! This combination of savory salmon bagels, small cream cheese cupcakes and a creamy milk coffee is simply perfect. The bagels are quick to top, while the cupcakes need a little more time in the oven, but the effort is worth it. The slight acidity of the raspberry sauce harmonizes wonderfully with the creamy cream cheese. Ideal for a relaxed weekend with friends or family. And the best part: everything can be prepared perfectly!

Ingredients (15 ingredients)

  • 50 g Butter
  • 120 g Oatmeal cookies
  • 700 g Double cream cream cheese
  • 50 g Whipping cream
  • 75 g Sugar
  • 1 Pck. Vanilla sugar
  • 15 g Cornstarch
  • 2 piece Eggs
  • 100 g Raspberries
  • 3 tbsp Strawberry jam
  • 1 piece small red Onion
  • 200 g Smoked salmon
  • 4 piece Bagel
  • 4 Tasse(n) Espresso (à 30 ml)
  • 600 ml Milk

Chop oatmeal cookies

Thermomix® Setting
8 sec/Speed 8

Place 120 g oatmeal cookies in the mixing bowl and chop for 8 sec/speed 8. If necessary, push down with the spatula and repeat the process.

Melt butter and mix with cookies

Thermomix® Setting
3 min/122°F/Speed 2 50

Put 50 g butter in the mixing bowl and melt for 3 min/50°C/speed 2. Add the chopped biscuits and mix for 10 sec/speed 3.

Fill cookie base into glasses

Distribute the cookie-butter mixture on the bottom of 4 ovenproof glasses and press firmly. Set the glasses aside.

Prepare cream cheese mixture

30 sec/Speed 4

Put 400 g double cream cream cheese, 50 g whipping cream, 75 g sugar, 1 pack. vanilla sugar, 15 g cornstarch and 2 eggs in the mixing bowl and stir for 30 sec/speed 4.

Fill cream cheese mixture into glasses

Distribute the cream cheese mixture evenly over the 4 glasses with the cookie base.

Bake cheesecakes

Place the jars in a baking dish. Pour water into the baking dish so that the jars are about 1 cm in the water. Bake in a preheated oven (electric oven: 180 °C/convection oven: 155 °C/gas: see manufacturer) for 30-40 minutes. Let cool after baking.

Prepare raspberry sauce

Put 100 g raspberries and 3 tbsp strawberry jam in the mixing bowl and puree for 15 sec/speed 8.

Refine cheesecakes with raspberry sauce

Fill the cooled cheesecakes with the raspberry sauce.

Cut onions

Thermomix® Setting
3 sec/Speed 5

Peel 1 small red onion, cut in half and place in the mixing bowl. Chop for 3 sec/speed 5. Push down with the spatula.

Top bagels

Halve 4 bagels and spread the bottom halves with the remaining (300g) double cream cream cheese. Spread 200 g smoked salmon and the chopped onions on top.

Froth milk

Thermomix® Setting
5 min/176°F/Speed 3 80

Put 600 ml milk in the mixing bowl and heat for 5 min/80°C/speed 3. Then whisk for 30 sec/speed 4.

Prepare Latte Macchiato

Brew 4 cups of espresso (à 30 ml). Divide the frothed milk into 4 tall glasses. Carefully pour the espresso into the glass over the back of a teaspoon so that three layers are formed.

Serve

Serve the topped bagels together with the cream cheese cupcakes and the Latte Macchiato.
