Description

This oriental chicken stir-fry is a recipe that I often prepare at home. It is a delicious and healthy way to enjoy chicken, with a sweet and sour touch that everyone loves. The combination of crunchy cashews and tender broccoli makes it irresistible. The preparation is simple, although it requires a little time to cut the vegetables and marinate the chicken. Ingredients (18 ingredients)

  • 500 gr chicken breast in strips
  • 4 tbsp ketchup
  • 1 tbsp balsamic vinegar
  • 1 tbsp paprika
  • 1 cdita ground ginger
  • 2 tbsp brown sugar
  • 2 tbsp barbecue sauce
  • 1 tbsp soy sauce
  • 0.2 cup cashews
  • 200 gr Basmati rice
  • 1 piece small broccoli
  • 0.5 piece red pepper
  • 0.25 piece onion
  • Cornstarch
  • Chopped garlic
  • Salt
  • Pepper
  • 1 pastilla meat broth (or a glass of homemade meat broth)

Preparation (8 steps)

Prepare the chicken

Salt and pepper 500 gr of chicken breast in strips and pass it through cornstarch. Fry in a pan with a little oil until golden brown. Remove and reserve on kitchen paper.

Prepare the oriental sauce

In the Thermomix bowl, add 4 tbsp of ketchup, 1 tbsp of balsamic vinegar, 1 tbsp of paprika, 1 tsp of ground ginger, 2 tbsp of brown sugar, 2 tbsp of barbecue sauce, 1 tbsp of soy sauce and chopped garlic to taste. Mix well for 10 sec./Speed 4.

Cook the chicken in the sauce

Thermomix® Setting
5 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Add the fried chicken to the Thermomix bowl and program 5 Min./100°C/Reverse/Spoon speed to sauté the chicken with the sauce.

Add the cashews

Thermomix® Setting
3 min/194°F/Giro a la izquierda/Velocidad cuchara 90 Reverse

Add 1/5 cup of cashews to the Thermomix bowl and program 3 Min./90°C/Reverse/Spoon speed. Leave at low temperature until it caramelizes a little.

Prepare the pepper and onion

In a separate pan, sauté 1/2 red pepper and 1/4 onion cut into small squares (brunoise). When the onion is transparent, add a glass of meat broth (or 1 cube of meat broth dissolved in a glass of water).

Cook the broccoli

Thermomix® Setting

Cook a small broccoli al dente steamed in the Varoma. Fill the Thermomix bowl with 500 ml of water, place the broccoli in the Varoma and program 15 Min./Varoma/Speed 1.

Cook the rice

Cook 200 gr of Basmati rice according to package instructions or use precooked rice.

First the rice. Add the onion and pepper. And finally the chicken. Serve immediately.

The first time I tried it was in a small Chinese restaurant in my neighborhood, and I loved the combination of sweet, salty and spicy flavors. I tried to replicate it at home, and after several tests, I arrived at this version that is now a classic in my kitchen. The chicken breast, cut into thin strips, is the base of this dish. By passing it through cornstarch before frying it, a crispy layer is created that contrasts with the softness of the interior. The oriental sauce is the soul of the stir-fry. The ketchup provides sweetness and an acidic touch, the balsamic vinegar adds depth, the paprika gives it a vibrant color and a smoky flavor, the ground ginger provides a spicy and aromatic touch, the brown sugar caramelizes the sauce, the barbecue sauce intensifies the smoky flavor and the soy sauce adds a salty and umami touch. The cashews, toasted lightly in the sauce, provide a delicious crunch and a nutty flavor that perfectly complements the rest of the ingredients. The broccoli, steamed al dente, adds a fresh and healthy touch, and the red pepper and onion, sautéed in a separate pan, provide a soft sweetness and a tender texture. To prepare this dish in the Thermomix®, it is important to follow the steps carefully. First, the chicken is prepared and set aside. Then, the sauce is prepared in the Thermomix® bowl, mixing all the ingredients at speed 4 for 10 seconds. Next, the fried chicken is added to the bowl and sautéed with the sauce for 5 minutes at 100°C, reverse and spoon speed. It is important to use the reverse to prevent the chicken from falling apart. After, the cashews are added and cooked for 3 minutes at 90°C, reverse and spoon speed, until they are lightly caramelized. Meanwhile, the red pepper and onion are sautéed in a separate pan, and the broccoli is steamed in the Varoma. This oriental chicken stir-fry is very versatile. For a vegetarian or vegan version, the chicken can be substituted with firm tofu cut into cubes or with seitan. Other vegetables can also be added, such as carrots, mushrooms or zucchini. To give it a spicier touch, you can add a little chopped red chili to the sauce. It can be served with basmati rice, jasmine rice or even with Chinese noodles. It can also be accompanied with a fresh salad or with some spring rolls. If there is leftover stir-fry, it can be stored in an airtight container in the refrigerator for a maximum of 3 days. To reheat it, you can use the microwave or a pan. It can also be prepared in advance and stored in the refrigerator until ready to serve. In this case, it is recommended to add the cashews just before serving so that they do not lose their crunch.
