Description

This creamy salmon soup is an absolute highlight for warm days! The combination of tender pieces of salmon, fresh dill and a hint of lemon makes it an unforgettable taste experience. I especially like to make it in the summer when the dill grows abundantly in the garden. The preparation is super easy and thanks to the Thermomix® it is done in a flash. The soup is light, filling and perfect as a main course or as a starter. A dash of cream ensures the creaminess, while the lemon-dill gremolata adds that certain something. Try it out, you will be thrilled!

Ingredients (11 ingredients)

  • 650 g Potatoes
  • 2 Stange(n) Leek
  • 2 tbsp Butter
  • 1 l Vegetable broth
  • 250 g Salmon (fresh or frozen, thawed)
  • 15 g Dill (fresh)
  • 1 Zehe(n) Garlic
  • 1 piece Organic Lemon (zest of it)
  • 150 ml Cream
  • to taste Salt
  • to taste white pepper

Preparation (7 steps)

Prepare potatoes and leek

Wash, peel and dice 650 g potatoes. Wash, clean and cut 2 leeks into rings. Set both aside.

Sauté the leek

Put 2 tbsp butter in the mixing bowl and melt for 3 min./120°C/speed 1. Then add the sliced leek and sauté for 3 min./120°C/speed 1.

Add potatoes and broth

15 min/212°F/Speed 1 100

Add the diced potatoes and 1 l vegetable broth to the mixing bowl and cook for 15 min./100°C/speed 1.

Add salmon

Thermomix® Setting
5 min/194°F/Gentle stir speed/Linkslauf 90 Reverse

Cut 250 g salmon (fresh or frozen, thawed) into bite-sized pieces and add to the mixing bowl. Let it steep for 5 min./90°C/gentle stir setting/reverse.

Prepare gremolata

Thermomix® Setting
5 sec/Speed 5

In the meantime, wash 15 g dill, shake dry and pluck the tips from the coarse stems. Peel 1 clove garlic and add to the mixing bowl together with the dill and the zest of 1 organic lemon. Chop for 5 sec./speed 5. Scrape down from the side with the spatula and chop for another 3 sec./speed 5.

Refine and season soup

Add 150 ml cream to the mixing bowl and heat for 2 min./80°C/speed 1. Season with salt and white pepper.

Serve

Divide the soup onto plates and serve sprinkled with the dill gremolata.
