Description

This dish is a feast for the eyes and the palate! I make Baked Stuffed Paccheri with fresh spring vegetables. The paccheri, these large, tube-shaped noodles, are filled with a creamy ricotta filling, flavored with peas, zucchini, and ham. The dish is easy to prepare and perfect for a lunch with friends or a family dinner. The preparation takes some time, but the result is worth it. The combination of creamy filling, crunchy vegetables, and golden brown crust is simply irresistible. A true delight of Italian cuisine!

Ingredients (12 ingredients)

  • Paccheri
  • Béchamel sauce
  • 250 g Ricotta
  • 150 g Peas
  • 100 g Cooked ham
  • 150 g Zucchini
  • 120 g Grated Parmigiano Reggiano
  • 1 piece Eggs
  • 0.5 piece Onion
  • 20 ml Extra virgin olive oil (EVO)
  • to taste Salt
  • 50 ml Water

Preparation (8 steps)

Precook paccheri

Fill a large pot with water and bring to a boil. Add salt. Cook the paccheri for half the time indicated on the package. Then rinse under cold water and spread on a clean kitchen towel.

Chop onion

Put half an onion in the mixing bowl and chop for 3 sec./speed 5. Scrape down with the spatula.

Sauté onion and peas

Add 20 ml of extra virgin olive oil to the mixing bowl and sauté for 3 min./120°C/speed 1. Add 150 g of peas and 50 ml of water and cook for 10 min./100°C/speed 1.

Add zucchini

Thermomix® Setting

Add 150 g of zucchini, diced, and a pinch of salt and cook for 5 min./100°C/speed 1.

Prepare filling

In a bowl, mix 250 g of ricotta, 1 egg and 120 g of grated Parmesan cheese.

Add vegetables and ham to the filling

Add the cooked vegetables and 100 g of diced ham to the ricotta mixture and mix.

Fill paccheri

Fill the filling into a pastry bag. Spread a baking dish with some béchamel sauce. Fill the paccheri with the filling and place in the baking dish.

Finish and bake casserole

Pour the remaining béchamel sauce over the paccheri and sprinkle with the remaining grated Parmesan cheese. Bake in a preheated oven at 200°C for 40 minutes, until the surface is golden brown.
