Description

This dish, which I have adapted to prepare it with the Thermomix®, is a true gem of Mexican cuisine. The little packages of white fish with cactus pads in chilli sauce are an explosion of flavour. The combination of the tender fish with the slightly acidic texture of the cactus pads and the spicy touch of the chilli sauce is simply delicious. It is a perfect dish for a special dinner or even to celebrate Christmas with a different touch. Furthermore, it is a rather healthy option and can be prepared in advance. I hope you enjoy this recipe as much as I do!

Ingredients (10 ingredients)

  • 4 piece Guajillo chillies
  • 4 piece Ancho chillies
  • 0.25 pieza Onion
  • 2 dientes Garlic
  • 1 cucharada sopera Chicken consommé powder
  • 4 filetes White fish
  • 4 pieza Cactus pad
  • 1 pinch Salt
  • 1 pinch Pepper
  • 4 trozos Aluminium foil

Preparation (9 steps)

Cooking the cactus pads

Cut the cactus pads into small rectangles. In a pot with boiling water, cook the cactus pads for 15 minutes. Drain and reserve.

Preparation of the chillies

Wash the guajillo and ancho chillies, open them, remove the seeds and devein them.

Soften the chillies

In a pot with boiling water, place the clean chillies and let them soften for 6 minutes. Drain and reserve.

Crush the sauce ingredients

Thermomix® Setting
30 sec/Speed 10

Place the softened chillies, the onion and the garlic cloves in the Thermomix glass. Add the chicken consommé powder and a splash of the water in which the chillies were soaked. Crush 30 sec./Stufe 10 until obtaining a homogeneous sauce.

Fry the sauce

Thermomix® Setting
5 min/248°F/Speed 1 120

Pour the sauce into the Thermomix glass. Fry 5 Min./120°C/Stufe 1. Season with salt and pepper.

Marinate the fish

Pour the sauce into a deep bowl. Place the white fish fillets in the sauce and let them marinate for 30 minutes.

Assemble the mixiotes

Place a marinated fish fillet on each piece of aluminium foil. Add cooked cactus pads and a little more sauce.

Seal the mixiotes

Seal the aluminium foil bags well.

Steam

Thermomix® Setting
30 min/Varoma/Speed 1 Varoma

Place 500 ml of water in the Thermomix glass. Place the mixiotes in the Varoma container. Steam 30 Min./Varoma/Stufe 1.
