Description

This rabbit and prawns paella is a recipe that I love to prepare for special occasions. The rabbit gives it a very particular flavour and the prawns provide a touch of the sea that makes it irresistible. The combination of meat and seafood is simply delicious. The recipe is quite simple, although it requires a little time and attention. The rice is creamy and full of flavour. It is perfect to share with friends and family in a festive meal. Go ahead and try it, I assure you that you will not regret it! Also, it is an excellent option to show off in a special meal.

Ingredients (13 ingredients)

  • 0.5 piece chopped rabbit
  • 6 piece king prawns
  • 0.5 piece spring onion
  • 2 piece pear tomatoes
  • 1 piece small Italian pepper
  • 0.25 piece red pepper
  • 1 container aged wine
  • 350 gr cristalino rice from Pals
  • 700 ml chicken stock
  • to taste salt
  • to taste pepper
  • extra virgin olive oil
  • 3 clove garlic

Preparation (7 steps)

Prepare the rabbit and prawns

Season the rabbit with salt and pepper. In a frying pan, brown the rabbit and prawns with a little olive oil. Set aside.

Sauté the garlic and vegetables

In the Thermomix bowl, add the garlic cloves and program 3 Sec./Speed 7 to chop them. Add olive oil and program 3 Min./120°C/Speed 1 to sauté the garlic. Add the spring onion, pear tomatoes and chopped peppers. Program 8 Min./120°C/Speed 1.

Add the aged wine

Add the aged wine to the bowl and program 2 Min./Varoma/Speed 1, without the beaker, to evaporate the alcohol.

Pearl the rice

Thermomix® Setting
3 min/248°F/Velocidad 1 120 Reverse

Add the rice to the bowl and program 3 Min./120°C/Speed 1, reverse rotation, to pearl the rice.

Add the stock

Thermomix® Setting
1 min/Velocidad 1

Add the hot chicken stock to the bowl, correct salt and pepper. Program 1 Min./Speed 1 to mix.

Bake the paella

Pour the contents of the bowl into an oven-safe paella pan. Place the rabbit and prawns on top of the rice. Place the paella in the preheated oven at 250°C for 15 minutes.

Rest and serve

Remove the paella from the oven and let it rest for 5 minutes before serving.
