Description

Filled fruit bread is a hearty and vegetarian recipe for the Thermomix®, ideal for the winter season or as a Christmas breakfast or dessert. The main ingredients are lemon, dried apricots, plums, apples and hazelnuts, refined with brown sugar and Christmas spices. The preparation time is a total of 630 minutes, with the active working time being approximately 60 minutes. The recipe yields 2 servings and is well suited as a special family meal.

Ingredients (13 ingredients)

  • 0.5 Lemon
  • 150 g dried Apricots
  • 150 g dried Plums
  • 800 g Sour Apples
  • 150 g whole Hazelnuts
  • 250 g Brown Sugar
  • 0.5 TL Cinnamon
  • 1 Msp. Ground Cloves
  • 500 g Flour
  • 1 Päckchen Baking Powder
  • 125 g Margarine
  • 50 g Margarine
  • 3 Eggs (Size M)

Preparation (5 steps)

Squeeze Lemon Juice and Prepare Fruit

Squeeze the juice from half a lemon. Cut 150 g dried apricots and 150 g dried plums into cubes or pieces. Wash 800 g apples, quarter them, remove the core, and dice the rest. Mix with the lemon juice and the diced dried fruit in a bowl.

Chop Nuts and Mix with Fruit

Put 150 g hazelnuts in the mixing bowl and chop for 5 sec./speed 5. Add to the diced fruit in the bowl. Add 250 g brown sugar, 1/2 tsp cinnamon and 1 pinch of ground cloves to the diced fruit. Mix and cover, leave to steep overnight.

Drain Fruit and Prepare Dough

Drain the soaked fruit in a sieve. Mix 500 g flour with 1 pack of baking powder in a large bowl. Add 125 g margarine in flakes and 3 eggs and knead with the dough hooks of a hand mixer to form a crumbly mass. Mix in fruit and nut mixture. Knead the dough with floured hands until finished.

Melt Margarine

3 min/122°F/Speed 1 50

Put 50 g margarine in the mixing bowl and melt for 3 min./50°C/speed 1.

Shape and Bake Breads

Shape two loaves and place on a baking sheet lined with baking paper. Brush fruit breads with the melted margarine and bake for approx. 60 minutes in a preheated oven at 150 °C circulating air (150 °C top/bottom heat).
