Description

This hearty bread is a rustic delight, ideal as a snack or appetizer. Baked with wheat and rye flour, it is topped with bacon, cheese and sour cream. Preparation in the Thermomix® simplifies the dough process, while frying the bacon in the pan adds extra flavor. Perfect for parties or a cozy breakfast. The preparation time is about 2 hours.

Ingredients (13 ingredients)

  • 400 g Wheat flour Type 550
  • 100 g Rye flour Type 1150
  • 1 würfel Yeast
  • 100 ml Milk
  • 1 TL Sugar
  • 1 TL Salt
  • 1 TL Bread spice
  • 2 EL Oil
  • 100 g Diced bacon
  • 1 Stück Onion
  • 20 g Oil
  • 100 g Grated cheese
  • 200 g Sour cream

Preparation (10 steps)

Prepare yeast

Thermomix® Setting
2 min/99°F/Speed 1 99°F

Add 100 ml milk to the mixing bowl and heat for 2 min./37°C/speed 1.

Add yeast

Add 1 cube of yeast to the warmed milk in the mixing bowl and mix for 10 sec./speed 3.

Prepare dough

Add 400 g wheat flour Type 550, 100 g rye flour Type 1150, 1 tsp sugar, 1 tsp salt, 1 tsp bread spice and 2 tbsp oil to the mixing bowl and process into a dough for 3 min./kneading stage.

Let the dough rise

Transfer the dough to a bowl and cover in a warm place for about 1 hour, until the volume has doubled.

Prepare topping

Fry 100 g diced bacon in a separate pan.

Prepare onions

Peel and quarter 1 onion and place in the mixing bowl. Chop for 3 sec./speed 5.

Sauté onions

3 min/248°F/Speed 1 248°F

Add 20 g oil to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Mix topping

Thermomix® Setting
20 sec/Linkslauf/Speed 2 Reverse

Add the fried bacon, 100 g grated cheese and 1 tub of sour cream to the sautéed onions in the mixing bowl and mix for 20 sec./reverse/speed 2.

Top bread

Roll out the dough on a baking sheet and spread with the bacon and cheese mixture.

Bake bread

Bake the bread in a preheated oven at 200°C top/bottom heat for approx. 25 minutes.
