Description

This basic recipe allows you to prepare toast bread or bread rolls with the Thermomix®. It contains flour, salt, yeast, cream cheese and oil. The dough is kneaded in the Thermomix®, then left to rise until it has doubled in volume, stretched and folded twice, shaped and left to rise again before being baked in the oven. Ideal for a hearty breakfast or as a side dish.

Ingredients (5 ingredients)

  • 400 g Flour
  • 1.5 TL Salt
  • 3 g Yeast
  • 75 g Cream cheese
  • 1 EL Oil

Prepare dough

Thermomix® Setting

Add 400g flour, 1.5 tsp salt, 3g yeast, 75g cream cheese and 1 tbsp oil to the mixing bowl and knead for 10 min./kneading setting.

Let the dough rise

Place the dough in a bowl and cover and let rise in a warm place until the volume has doubled. This usually takes 1-2 hours.

Stretch and fold dough

Place the dough on a lightly floured work surface and stretch and fold twice. To do this, pull the dough into a rectangle, fold the left side to the middle and place the right side over it. Then turn the dough 90 degrees and repeat the process.

Shape dough

Shape the dough into a toast bread or bread rolls. For toast bread, shape the dough into a loaf and place in a greased loaf tin. For bread rolls, divide the dough into equal pieces and shape into bread rolls.

Let the dough rise again

Cover the shaped dough and let rise again until it has visibly increased in size. This takes about 30-60 minutes.

Baking

Preheat the oven to 200°C top/bottom heat. Bake the toast bread or bread rolls in the preheated oven for approx. 25-35 minutes until golden brown.
