  • 480 g Wheat flour 550
  • 120 g Wheat flour 1050
  • 100 g Rye flour 1150
  • 480 g lukewarm water
  • 20 g fresh yeast
  • 20 g Sourdough powder
  • 20 g Oil
  • 1 TL Sugar
  • 2 TL Salt

Prepare yeast

Add the fresh yeast and sugar to the lukewarm water and dissolve in the mixing bowl for 2 min./37°C/speed 2.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

Add wheat flour 550, wheat flour 1050, rye flour 1150, sourdough powder, oil and salt and knead into a dough for 3 min./kneading stage.

Let the dough rise

Cover the dough and let it rise in a warm place for 1 hour.

Shape and prepare bread

After the rising time, place the dough on a floured work surface, fold and shape into a loaf of bread. Place the loaf of bread in a floured (unsoaked) clay pot. Moisten, flour and score the surface of the dough.

Bake bread

Place the clay pot with the lid in the cold oven on the lowest rack. Bake the bread at 240 degrees top/bottom heat for 50-60 minutes.
