Description

This Simit bread recipe yields sesame rings that are crispy on the outside and soft on the inside. Ideal as a snack or for breakfast. Preparation takes about 2.5 hours and makes 14 servings. The recipe is vegetarian and is prepared in the Thermomix®.

Ingredients (10 ingredients)

  • 125 ml lukewarm milk
  • 125 ml lukewarm water
  • 1 EL sugar
  • 7 g dry yeast (Instant Maya)
  • 1 TL salt
  • 60 g butter
  • 5.5 Wassergläser flour
  • 75 ml Pekmez (grape molasses)
  • 75 ml water
  • sesame seeds

Preparation (9 steps)

Add milk, water, sugar and yeast to the mixing bowl

Add 125 ml lukewarm milk, 125 ml lukewarm water, 1 tbsp sugar and 7 g dry yeast to the mixing bowl.

Add salt, butter and flour

Add 1 tsp salt, 60 g butter and 5-6 water glasses of flour (adjust the amount as needed) to the mixing bowl.

Let the dough rise

Remove the dough from the mixing bowl, place in a bowl, cover and let rise in a warm place for 1 hour.

Portion the dough

After rising, briefly knead the dough and divide into 14 equal pieces (Beze).

Shape the dough pieces

Roll the dough pieces into strands and shape into the typical Simit shape.

Prepare the glaze

Mix 75 ml Pekmez (grape molasses) and 75 ml water in a bowl.

Glaze the Simit and sprinkle with sesame seeds

First dip the shaped dough rings in the Pekmez-water mixture, then turn in sesame seeds and place on a baking sheet lined with parchment paper.

Second resting phase

Let the Simit rest on the baking sheet for another 30 minutes.

Bake the Simit

Bake in a preheated oven at 220 °C (top/bottom heat) until golden brown. The baking time is approx. 15-20 minutes.
