Description

This house bread recipe is easy to prepare and succeeds in no time with the Thermomix®. Baked with rye and wheat flour, it is a hearty bread for breakfast or as a side dish to the main course. The preparation time is about 1 hour and 45 minutes, the working time about 45 minutes. The recipe is designed for 2 loaves.

Ingredients (6 ingredients)

  • 675 g lukewarm Water
  • 500 g Wheat bread flour 1600
  • 500 g Rye flour 960
  • 20 g Salt
  • 1 tsp Bread spice
  • 20 g fresh Yeast

Prepare dough

Thermomix® Setting
5-10 min/Kneading speed

Add 675 g lukewarm water to the mixing bowl. Add 500 g wheat bread flour 1600, 500 g rye flour 960, 20 g salt, 1 tsp bread spice and 20 g fresh yeast and knead for 5-10 min./kneading stage. Let the dough rest covered in the mixing bowl for about 1 hour.

Divide and knead dough

Remove the dough from the mixing bowl, divide into two parts and knead them again well.

Shape and rest breads

Form round loaves from the dough pieces and let the breads rest for about 10 minutes.

Bake breads

Finally, spray the loaves with water and bake in a preheated oven at 210°C for about 45 minutes with plenty of steam.
