Description

These cloud bread rolls are a delicious breakfast pastry. The recipe is easy to prepare and the rolls are fluffy and light. Ideal for a cozy breakfast or brunch. The preparation time is about 120 minutes and the recipe is designed for 8 servings. The rolls are vegetarian and contain wheat, milk and eggs.

Ingredients (9 ingredients)

  • 1 tbsp Sugar
  • 150 ml Milk (lukewarm)
  • 1 Pck. Dry yeast
  • 50 g Butter
  • 500 g Flour (Type 550)
  • 1 tsp Salt
  • 250 g Cottage cheese
  • 1 Ei Egg
  • 1 Ei Egg for brushing

Prepare yeast

Put 150 ml lukewarm milk and 1 tbsp sugar into the mixing bowl and heat for 2 min./37°C/speed 1. Add 1 pack dry yeast and let it rest for 5-10 min. until bubbles form.

Melt butter

Melt 50 g butter in a saucepan or in the microwave and let it cool down a little.

Prepare dough

Put 500 g flour (Type 550) and 1 tsp salt into the mixing bowl. Add 250 g cottage cheese, 1 egg and the melted butter.

Add yeast mixture and knead dough

Add the yeast mixture to the flour. Insert the Patix dough knife and knead for 2 min./kneading level to a smooth dough. If necessary, add a little more flour if the dough is too sticky.

Let the dough rise

Cover the dough with a clean kitchen towel and let it rise in a warm place for about 1 hour until it has doubled in volume.

Form rolls

After the rising time, place the dough on a lightly floured work surface. Divide into 8-10 equal portions and form round rolls.

Let the rolls rest

Place the rolls on a baking sheet lined with baking paper, cover and let rest for another 30 min.

Brush and bake rolls

Preheat the oven to 180°C top/bottom heat. Whisk 1 egg and brush the risen rolls with it. Bake the rolls for about 20-25 min. until golden brown.

Cool and enjoy

Let the rolls cool down briefly and enjoy fresh with butter or jam.
