Description

I love preparing these panini with caramelized onions and sausages! They are perfect for a quick dinner or an informal brunch with friends. The sweetness of the caramelized onions goes perfectly with the smoked flavor of the sausages, creating a delicious contrast. The preparation is quick and easy, especially thanks to the Thermomix® which helps me caramelize the onions perfectly. A touch of mustard and ketchup completes the dish, making these panini irresistible. Ideal for an evening in front of the TV or for an outdoor picnic. Try them, they will win you over!

Ingredients (10 ingredients)

  • 4 piece Hot dog buns
  • 500 g Onions
  • 4 piece Sausages
  • 50 ml Ketchup
  • 50 ml Mustard
  • 30 ml Extra virgin olive oil
  • 50 ml Water
  • 30 g Brown sugar
  • 1 pinch Salt
  • 20 ml Balsamic vinegar

Preparation (9 steps)

Preparation of the onions

Clean the onions by removing the hardest outer layers and the ends. Cut the onions in half and slice them to a thickness of about 1 centimeter.

Caramelizing the onions

Transfer the sliced onions to the Thermomix bowl. Add 30 ml of extra virgin olive oil, 50 ml of water, 30 g of brown sugar and a pinch of salt. Mix gently with the spatula.

Initial cooking of the onions

Thermomix® Setting
20 min/212°F/Gentle stir speed 100 Reverse

Cook the onions with the lid on for 20 minutes at 100°C in reverse direction at soft speed.

Prolonged cooking of the onions

Thermomix® Setting
45 min/212°F/Gentle stir speed 100 Reverse

Remove the lid and continue cooking for another 45 minutes at 100°C in reverse direction at soft speed, stirring occasionally with the spatula.

Deglaze with balsamic vinegar

Thermomix® Setting
5 min/212°F/Gentle stir speed 100 Reverse

Raise the speed to 1 and add 20 ml of balsamic vinegar. Cook for 5 minutes at 100°C in reverse direction at soft speed to evaporate the alcoholic part of the vinegar and mix everything together.

Deglaze the bottom

If the onions start to stick to the bottom, add very little water (about 10 ml) and mix with the spatula to deglaze the bottom.

Preparation of the buns and sausages

Cut the hot dog buns in half, without completely dividing them. Lightly score the skin of the sausages.

Grilling the buns and sausages

Lightly grill the buns and sausages on a hot grill. This step is not performed with the Thermomix.

Composition of hot dogs

Distribute the caramelized onions and grilled sausages inside each bun, and finally sprinkle with mustard and ketchup to taste. Serve immediately.
