This Finnish Oven Pancake, or Kropsua, is a delightful and easy-to-make treat perfect for a cozy breakfast or a simple dessert. I've been making this for my family for years, and it's always a hit! The pancake bakes in the oven until golden brown and puffy, creating a unique texture that's both soft and slightly crispy. It's wonderful served warm with a dusting of powdered sugar or a dollop of fresh cream. This recipe is especially great for using up leftover milk and eggs. It's a budget-friendly and satisfying dish that everyone will enjoy.

Ingredients (6 ingredients)

  • 0.5 cup butter
  • 2 cups milk
  • 1 cup all-purpose flour
  • 2 piece eggs
  • 2 tablespoons white sugar
  • 0.5 teaspoons salt

Preparation (5 steps)

Preheat oven and melt butter

Preheat oven to 400 degrees F (200 degrees C). Place ½ cup butter in a 9x13-inch baking dish and place in the preheating oven until melted, about 5 minutes. Remove the baking dish with the melted butter from the oven and set aside.

Mix batter

Add 2 cups milk, 1 cup all-purpose flour, 2 eggs, 2 tablespoons white sugar, and ½ teaspoon salt to the Thermomix bowl. Mix until the batter is smooth. 20 Sec./Stufe 4

Incorporate melted butter into batter

Thermomix® Setting

Pour the melted butter from the baking dish into the Thermomix bowl with the batter. Mix until smooth. 10 Sek./Stufe 3

Pour batter into baking dish

Pour the batter from the Thermomix bowl into the baking dish with the melted butter.

Bake the pancake

Bake in the preheated oven until cooked through, 20 to 25 minutes.
