Description

This Thermomix® salad with oven tomatoes, Burrata and Ciabatta is a simple, vegetarian main course or side dish for 2 portions. The Panzanella with cherry tomatoes, garlic and fresh herbs is prepared in 30 minutes, of which 15 minutes are working time. Ideal for light, Italian summer cuisine. The recipe is particularly suitable for lovers of uncomplicated dishes.

Ingredients (15 ingredients)

  • 300 g Cherry tomatoes
  • 2 Zehen Garlic
  • 1 Zweig Rosemary
  • 2 Zweige Thyme
  • 6 EL Olive oil
  • 1 Prise Salt
  • 1 Prise Pepper
  • 150 g Ciabatta (from the day before)
  • 2 EL Olives (green + black, pitted)
  • 1 Handvoll Rocket
  • 1 Kugel Burrata
  • 2 EL Red wine vinegar
  • 1 TL Honey
  • 1 TL Dijon mustard
  • 2 EL Water

Prepare

Preheat oven to 150°C top/bottom heat. Line baking tray with baking paper. Wash and halve cherry tomatoes. Place 2 cloves of garlic (with peel), rosemary and thyme in a bowl and mix with 2 tbsp olive oil. Season with salt and pepper. Spread tomatoes on the baking sheet with the cut surface facing upwards. Bake in the preheated oven for approx. 25-30 min.

Roast ciabatta

Cut ciabatta into approx. 2-3 cm pieces. Heat 4 tbsp olive oil in a separate pan and fry the ciabatta in it until golden brown. Remove ciabatta from pan and place in a large bowl.

Prepare olives and rocket

Cut olives into slices. Wash and shake rocket dry. Add both to the ciabatta in the bowl.

Add tomatoes

Add cooled tomatoes from the tray to the bowl. Remove rosemary, thyme and garlic. Keep one clove of garlic for the dressing.

Prepare dressing

Put 2 tbsp red wine vinegar, 1 tsp honey, 1 tsp mustard, 1 clove of garlic (from the tomatoes), juice of the tomatoes, 2 tbsp olive oil and 1-2 tbsp water into the mixing bowl. Puree for 30 sec./level 8. Season with salt.

Arrange salad

Pour dressing over salad and mix carefully. Distribute salad on 2 plates and arrange with ½ ball of Burrata each. Drizzle some olive oil over the Burrata and serve immediately.
