Description

This hearty onion soup, topped with crispy bread cubes and cheese, is a true classic of French cuisine. I especially like to make it in autumn and winter when it's cold outside. The preparation is a bit time-consuming, but the result is worth every minute! The caramelized onions give the soup a wonderful sweetness that harmonizes perfectly with the salty cheese. An ideal dish for a cozy dinner with friends or family. If you like, you can add a shot of brandy.

Ingredients (8 ingredients)

  • 5 piece Onion
  • 50 g Butter
  • 3 c Pork
  • 6 slice Country bread
  • Flour
  • 6 tiges Flat parsley
  • Salt
  • Pepper

Preparation (6 steps)

Prepare onions

Thermomix® Setting

Peel and halve 5 onions. Place the halved onions in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Sauté onions

Add 50 g butter to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add and sweat flour

Thermomix® Setting

Add an unknown amount of flour to the onions and stir with the spatula until the mixture browns slightly. This takes about 1 minute at 120°C/speed 1.

Cook soup

Add 1.5 liters of water to the mixing bowl. Add 3 pieces of pork ear, 6 sprigs of parsley, salt and pepper. Cook for 20 min./100°C/speed 1.

Prepare bread

Cut 6 slices of farmhouse bread into quarters. Melt 30 g butter in a pan and fry the bread slices in it until golden brown. The pan is not replaced by the Thermomix.

Divide and bake soup

Divide the onion soup into 6 bowls. Put 4 bread cubes in each bowl and sprinkle with grated cheese. Bake in the oven under the grill for about 5 minutes until the cheese is golden brown. The oven is not replaced by the Thermomix.
