This pasta dish is a delightful combination of tender chicken, crisp green beans, and flavorful pesto, all tossed together for a quick and satisfying meal. I've been making this for years, and it's always a hit! The double cream adds a touch of richness, making it perfect for a weeknight dinner or a light lunch. It's so easy to prepare, especially with pre-cooked chicken, and the Thermomix® makes it even simpler. Feel free to add a sprinkle of Parmesan cheese for an extra layer of flavor. This recipe is a great way to use up leftover chicken and enjoy a delicious, balanced meal.

Ingredients (7 ingredients)

  • 400 g pasta
  • 250 g green bean
  • 1 tbsp olive oil
  • 1 bunch spring onions
  • 2 piece ready-roasted chicken breasts
  • 5 tbsp pesto
  • 3 tbsp double cream

Preparation (4 steps)

Cook pasta and green beans

Thermomix® Setting
10 min/212°F/Speed 1 100

Fill the mixing bowl with 1000ml water. Bring to a boil for 10 Min./100°C/Stufe 1. Add 400g pasta and cook according to package instructions. Add 250g green beans for the final 6 mins of cooking time. Drain the pasta and green beans using the simmering basket and reserve a few tbsps of the cooking water.

Prepare spring onions

Thermomix® Setting
2 min/248°F/Speed 1 120

Add 1 tbsp olive oil and 1 bunch spring onions, chopped, to the mixing bowl. Cook for 2 Min./120°C/Stufe 1 until soft. Remove from the mixing bowl and set aside.

Heat chicken with pesto and cream

Thermomix® Setting
2 min/212°F/Speed 1 100

Add 2 large ready-roasted chicken breasts, shredded, to the mixing bowl. Heat through for 2 Min./100°C/Stufe 1. Stir in 5 tbsp pesto and 3 tbsp double cream. Mix for 30 Sec./Stufe 2.

Combine pasta, beans, and chicken

Thermomix® Setting
30 Sec./Speed 2

Add the cooked pasta and green beans to the mixing bowl with the chicken mix. Stir to coat for 30 Sec./Stufe 2, adding a little of the reserved cooking water if needed. Season to taste.
