Ingredients (10 ingredients)

  • 2 tbsp olive oil
  • 1 piece red onion
  • 2 clove garlic cloves
  • 2 tbsp nduja
  • 65 g green olives
  • 200 g cherry tomatoes
  • 400 g mafalda pasta
  • 1 l hot vegetable stock
  • 4 tbsp mascarpone
  • 50 g parmesan

Preparation (4 steps)

Sauté onion and garlic

Add the olive oil to the Thermomix bowl. Add the red onion and garlic cloves. Cook for 10 min./120°C/Speed 1, stirring occasionally, until the onion is softening and turning golden at the edges.

Add nduja, olives, and tomatoes

Add the nduja, green olives, and cherry tomatoes to the Thermomix bowl. Season well with salt and pepper. Cook for 6 min./120°C/Speed 1, until the tomatoes blister and begin to break down.

Cook the pasta

15 min/212°F/Reverse/Speed 1 100 Reverse

Add the mafalda pasta and hot vegetable stock to the Thermomix bowl. Cook for 15 min./100°C/Reverse/Speed 1, stirring well after 5 minutes.

Stir in mascarpone and parmesan

Thermomix® Setting
1 min/140°F/Reverse/Speed 1 60 Reverse

Add the mascarpone and parmesan to the Thermomix bowl. Cook for 1 Min./60°C/Reverse/Speed 1. Season to taste, then serve with more parmesan scattered on top.
