Description

Nothing beats homemade fresh pasta! With this recipe, easily make delicious egg pasta with your Thermomix®. The dough is simple to prepare and the result is incomparable to store-bought dry pasta. Ideal for a festive meal or a family dinner, this fresh pasta goes wonderfully with a homemade tomato sauce, a creamy mushroom sauce or simply a little butter and parmesan. A real treat for the taste buds! Let the dough rest for at least an hour for a perfect texture. Feel free to vary the pasta shapes according to your desires: tagliatelle, spaghetti, lasagna... The possibilities are endless!

Ingredients (4 ingredients)

  • 500 g of flour
  • 5 piece eggs
  • 3 c. à s. of olive oil
  • Salt or fine salt

Preparation of the dough

Thermomix® Setting
2 min/Kneading speed

Pour 500 g of flour, 5 eggs, 3 tbsp of olive oil and a pinch of salt into the Thermomix bowl. Add 2 tablespoons of hot water. Mix 2 Min./Knetstufe.

Resting the dough

Remove the dough from the Thermomix, form a ball and wrap it in cling film. Let rest at least one hour at room temperature.

Shaping the pasta

Divide the dough into small balls. Roll out each ball thinly with a rolling pin on a floured work surface, until you obtain a thickness of approximately 1 mm, or use a pasta machine. Flour the pasta sheets and roll them up to cut them into strips of the desired width.

Cooking the pasta

In a large saucepan, bring salted water to a boil. Immerse the pasta in boiling water and cook until they rise to the surface (approximately 2-3 minutes).

Service

Gently drain the pasta with a skimmer and place them on a plate. Add a little butter and grated cheese before serving.
