This simple dish is perfect for a relaxed evening. The combination of creamy feta, sweet cocktail tomatoes and al dente pasta is simply irresistible. I often make this oven-feta pasta when I need to be quick and still want something delicious on the table. The preparation is very easy and the result tastes simply delicious. Ideal for students or anyone who has little time to cook. A vegetarian dish that is guaranteed to please everyone!

Ingredients (7 ingredients)

  • 250 g Spelt spaghetti
  • 200 g Feta cheese
  • 500 ml Vegetable broth
  • 300 g Cocktail tomatoes
  • 1 clove Garlic
  • 4 tbsp Olive oil
  • 1 tbsp Herbs, Italian

Chop garlic

Peel the garlic clove, put it in the mixing bowl and chop for 3 sec./speed 7. Push down with the spatula.

Preparation for the oven

Preheat the oven to 220 °C top/bottom heat. Place the uncooked spelt spaghetti in a baking dish. Place the feta in the middle of the spaghetti. Wash, halve and distribute the cocktail tomatoes around the feta. Distribute the chopped garlic over the feta. Pour the vegetable broth over the noodles. The noodles must be covered with broth by approx. 1 cm.

Seasoning and baking

Pour the olive oil over the noodles, tomatoes and feta. Season with Italian herbs, salt and pepper to taste. Bake on the middle rack in the oven for approx. 35 minutes until the water has been almost completely absorbed by the noodles. Test whether noodles are cooked.

Mix and Serve

Remove the baking dish from the oven and mix everything together. Serve immediately.

About this recipe

This pasta with oven-feta and tomatoes is a dish that I keep coming back to when I need to be quick, but still want something special. I discovered it a few years ago when I was looking for simple but tasty recipes that can be made with just a few ingredients. It's a kind of modern interpretation of a classic Mediterranean dish that focuses on the simplicity and taste of fresh ingredients. The feta cheese plays the main role here. I prefer to use feta made from sheep's milk, as it has a more intense, slightly salty taste. It becomes wonderfully creamy in the oven and gives the pasta a great texture. The cocktail tomatoes provide a pleasant sweetness and acidity that harmonizes perfectly with the salty feta. They burst open in the oven and release their juice into the pasta, making the dish particularly juicy. The spelt spaghetti is my preferred type of pasta for this dish because it has a slightly nutty taste and retains a good consistency even when baked in the oven. The preparation with the Thermomix® is very simple. First, the clove of garlic is crushed in the mixing bowl. This is done in a flash and ensures that the garlic can distribute its aroma evenly in the dish. Then the remaining ingredients are placed in a baking dish and poured over with the vegetable broth. Make sure that the pasta is sufficiently covered with liquid, as it will absorb it in the oven. The Italian herbs give the dish a Mediterranean touch. I like to use a mixture of oregano, thyme and rosemary. For a vegan version, the feta can be replaced with a vegan feta alternative. There are now some good products on the market that come very close to the original in terms of taste. Instead of olive oil, another vegetable oil can also be used. If you like it a little spicier, you can add a pinch of chilli flakes. It is best to serve the pasta with oven-feta and tomatoes immediately after preparation. A fresh salad with a light dressing goes well with it. A glass of dry white wine rounds off the dish perfectly. Leftovers can be stored in the refrigerator and reheated the next day. However, the pasta tastes best freshly prepared. You can also prepare the dish well by placing all the ingredients in the baking dish and storing it in the refrigerator until baking. This means you can quickly have a delicious dinner on the table even after a long day.
