Description

This dish is a real hit when you need something quick! The pasta with spicy shrimps in garlic oil is super easy to prepare and tastes simply delicious. I love making it when I have little time, but still want to put something special on the table. The fresh chili and garlic give the dish a pleasant spiciness and flavor. Perfect for a cozy evening at home or as a quick lunch. If you like, you can add some freshly grated Parmesan cheese on top. An absolute favorite recipe!

Ingredients (10 ingredients)

  • 400 g Spaghetti
  • 450 g Shrimps, raw and peeled
  • 10 tbsp Olive oil extra virgin
  • 1 tbsp Lemon juice
  • 1 piece Chili, red and fresh
  • 1 Msp Chili flakes, dried
  • 4 clove Garlic cloves
  • 20 g Parsley, smooth and fresh
  • to taste Sea salt
  • to taste Black pepper

Preparation (6 steps)

Prepare garlic and chili

Thermomix® Setting

Put 3-4 garlic cloves into the mixing bowl and chop for 3 sec./level 7. Wash, core and finely dice 1 red chili. Remove both from the mixing bowl and set aside.

Chop parsley

Thermomix® Setting
3 sec/Speed 5

Wash 20 g of smooth parsley, shake dry, roughly chop and put into the mixing bowl. Chop for 3 sec./level 5 and set aside.

Prepare garlic-chili oil

Thermomix® Setting

Put 7 tbsp olive oil, 1 tbsp lemon juice and 1 pinch of chili flakes into the mixing bowl. Add chopped garlic, chili and parsley. Mix for 5 sec./level 3 and transfer.

Sauté shrimps

4 min/248°F/Linkslauf Speed 1 120 Reverse

Put 3 tbsp olive oil into the mixing bowl and heat for 3 min./120°C/level 1. Add 450 g raw, peeled shrimps (or thawed frozen shrimps) and sauté for 4 min./120°C/reverse level 1.

Mix shrimps with garlic-chili oil

Add the prepared garlic-chili oil mixture to the shrimps in the mixing bowl and heat for 1 min./100°C/reverse level 1.

Serve pasta

Cook 400 g spaghetti in salted water according to the package instructions. Drain and add dripping wet to the shrimps in the mixing bowl. Mix for 10 sec./reverse level 2. Season with sea salt and black pepper and serve.

This recipe for pasta with spicy shrimps in garlic oil came about when I was looking for a quick but sophisticated dish that I could prepare after a long day at work. Inspired by Italian classics like Aglio e Olio, I refined it with shrimps and chili to give it a special touch. It is a dish that reminds me of sunny evenings by the sea, even when I am in the middle of a gray everyday life. The ingredients all play an important role in the taste and texture of the dish. The spaghetti form the base and should be of good quality so that they do not become too soft when cooked. The shrimps are the star of the dish and should be fresh or of good quality if they are frozen. They bring a light sweetness and a pleasant texture with them. The olive oil extra virgin is crucial for the taste of the dish. It should be a high-quality oil that has a fruity and slightly peppery taste. The garlic and chili provide the spiciness and flavor that make the dish so special. The parsley brings a fresh note and the lemon a light acidity that rounds off the dish. When preparing in the Thermomix®, it is important to add the ingredients in the correct order. First, garlic and chili are crushed to release their flavors. Then the parsley is chopped to add it to the oil later. The garlic-chili oil is prepared separately so that the flavors can combine well. The shrimps are then steamed in the Thermomix® until they are cooked. Finally, the garlic-chili oil is added and the pasta is mixed in. Be careful not to cook the shrimps for too long, otherwise they may become tough. The reverse is important so that the shrimps are not crushed. For a vegetarian version, the shrimps can be replaced with tofu or mushrooms. For a vegan version, you can also use vegan spaghetti and, if necessary, vegan Parmesan. Instead of chili, other spices such as paprika or curry can also be used. If you don't like it too spicy, you can leave out the chili or use only half of it. Serve the pasta with spicy shrimps in garlic oil immediately after preparation. A fresh salad or a piece of bread goes well with it. If you like, you can add some freshly grated Parmesan cheese on top. A glass of dry white wine rounds off the dish perfectly. Leftovers of the pasta can be stored in the refrigerator and warmed up the next day. However, it tastes best when freshly prepared. The garlic-chili oil can also be prepared separately and stored in the refrigerator. So you always have it ready to hand when you need something quick.
