  • 350 g Capellini - 3 minutes Spaghetti
  • 200 ml Cream - 30% fat
  • 250 ml Chicken broth - bouillon cube/paste or homemade
  • 1 piece Organic Lemon - grated peel
  • 3 tbsp Juice of an organic lemon - freshly squeezed
  • 30 g fresh Parsley, finely chopped - approx. 1 bunch
  • 30 g Parmesan, freshly grated
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 pinch Sugar
  • 20 g Parmesan, freshly grated
  • to taste Sea salt
  • to taste Pepper

Heat Cream, Broth and Lemon Juice

Put 200 ml cream, 250 ml chicken broth and 3 tbsp lemon juice into the mixing bowl and heat for 4 min./90°C/speed 2.

If necessary, thicken the sauce by extending the cooking time at 90°C/speed 2 without reverse rotation. However, the consistency should remain rather liquid, as the noodles absorb a lot of liquid.

Drain and Mix Capellini

Cook 350 g capellini according to package instructions in salted water, drain and place in a bowl. Add the cream sauce from the mixing bowl, the grated peel of a lemon and 30 g grated Parmesan to the noodles and mix well.

Arrange and serve

Arrange the capellini with shrimps on plates and sprinkle with 20 g grated Parmesan, sea salt and pepper. Serve immediately.

It's a dish that evokes memories of warm summer evenings and the sound of the sea. The shrimps are the star of the dish. Make sure to use fresh, raw shrimps, preferably with the shell on, which you can remove yourself. By the way, you can use the shells wonderfully for an intense fish stock, which you can then use instead of the chicken broth. The capellini, also known as angel hair pasta, are ideal because they perfectly absorb the light sauce. Use high-quality cream with a fat content of at least 30% so that the sauce becomes nice and creamy. The chicken broth provides a hearty base, while the lemon, with its peel and juice, contributes a refreshing acidity and an intense aroma. The parsley brings a fresh, green note and the Parmesan rounds off the dish with its spicy saltiness. When preparing in the Thermomix®, it is important to adhere to the cooking times exactly, especially for the shrimps. They should be tender and juicy, not rubbery. The reverse rotation is crucial so that the shrimps are not crushed. If you like the sauce a little thicker, you can extend the cooking time, but keep in mind that the noodles absorb liquid when mixed. Make sure to cook the capellini al dente, as they will continue to cook a little in the hot sauce. For a vegetarian version, you can replace the shrimps with fried zucchini or eggplant cubes. For a vegan version, use vegetable cream and omit the Parmesan or replace it with nutritional yeast for a similar, cheesy taste. Also experiment with other herbs such as dill or thyme.
