Description

  • 1 piece made sponge cake
  • 150 mililitros milk
  • 250 mililitros dairy cream
  • 100 gramos sugar
  • 1 cucharadita agar agar

Whip the dairy cream

Place the dairy cream in the Thermomix bowl and beat with the butterfly attachment for 2 Min./Level 3.5. Watch so that it does not turn into butter.

Incorporate the sugar

Add the sugar to the bowl with the whipped cream and mix for 10 Sek./Level 3.

Add the milk (part)

20 sec/Speed 3

Set aside a little milk. Add the rest of the milk little by little to the bowl and mix for 20 Sek./Level 3, making sure that the mixture maintains its volume.

Dissolve the agar agar

Heat the reserved milk in the microwave or in a saucepan. Add the agar agar and stir until completely dissolved. Let it warm.

Incorporate the agar agar to the mixture

Add the warm agar agar mixture to the Thermomix bowl and mix for 10 Sek./Level 3.

Pour over the sponge cake

With the sponge cake still in its mold, pour the flan mixture over the sponge cake and let it absorb the liquid a little.

Refrigerate

Leave the flan cake in the refrigerator until the flan has set, for a minimum of 4 hours.

Unmold and decorate

Unmold carefully and decorate with whipped cream, liquid caramel or whatever you like best.
