Description

This recipe for baked potatoes with tomato-bean filling is a hearty and vegetarian main course. The potatoes are baked in the oven and then filled with a spicy bean and tomato sauce. Garnished with nutritional yeast and fried onions, this dish is ideal for a quick and satisfying lunch or dinner. The preparation time is about 90 minutes and is enough for 2 servings.

  • 2 Stück large potatoes
  • 1 Dose beans of your choice
  • 1 Stück diced onion
  • tomato paste
  • spices of your choice (salt, pepper, potato seasoning, umami, rosemary...)
  • tomato sauce/tomato sugo
  • nutritional yeast
  • fried onion
  • olive oil

Preparation (6 steps)

Prepare potatoes

Wash the potatoes well, rub with olive oil and sprinkle with spices of your choice (salt, pepper, potato seasoning, umami, rosemary...). Then wrap the potatoes in aluminum foil.

Bake potatoes

Line a baking sheet with baking paper. Place the potatoes on it and prick several times with a fork. Bake in a preheated oven at 180°C top/bottom heat for approx. 45 minutes to 1 1/2 hours, depending on the size of the potatoes.

Chop onions

Chop the onion with the Wundermix WunderSlicer V2 on level 3. Use the fine slice and collect the chopped material.

Prepare bean-tomato filling

Heat some olive oil in a pan. Sauté the chopped onions and beans (1 can) in it. Add tomato paste (to taste) and sauté briefly. Deglaze with some tomato sauce/tomato sugo, season well and let it reduce.

Fill potatoes

Remove the potatoes from the oven, cut them open in the middle while still in the aluminum foil and unfold them. Remove aluminum foil and fill the potatoes with the bean-tomato filling.

Garnish potatoes

Sprinkle the filled potatoes with nutritional yeast, fried onions and fresh herbs (possibly with salt) and serve.
