Description

These homemade patatas bravas are a classic of Spanish cuisine, perfect for sharing with friends or as a delicious appetizer. The key is in the brava sauce, with its spicy touch and smooth texture. I have been preparing them for years and they are always a success. The sauce is made in the Thermomix®, which greatly facilitates the process. The potatoes are crispy on the outside and tender on the inside. An irresistible bite! They are ideal for a tapas night or simply to enjoy an authentic flavor. You can adjust the spice level of the sauce to your liking. Enjoy!

Ingredients (8 ingredients)

  • 3 piece Good sized potato
  • 0.5 piece Medium onion
  • 0.5 tbsp Sweet paprika
  • 1 tbsp Hot paprika
  • 2 tbsp Wheat flour
  • 500 ml Chicken broth
  • Extra virgin olive oil for frying the potatoes
  • Fresh parsley for garnish

Preparation (9 steps)

Chop the onion

Insert half an onion into the glass and chop for 3 seconds at speed 5.

Sauté the onion

Add 4 tablespoons of extra virgin olive oil to the glass and sauté the onion for 3 minutes at 120°C at speed 1.

Add sweet and hot paprika

Add half a tablespoon of sweet paprika and a tablespoon of hot paprika to the glass. Mix for 10 seconds at speed 2.

Incorporate the flour

Thermomix® Setting

Add two tablespoons of wheat flour to the glass and program 1 minute at 100°C at speed 2.

Add the chicken broth

Add 500 ml of chicken broth to the glass and program 10 minutes at 90°C at speed 2.

Crush the sauce

Crush the sauce for 30 seconds at speed 10.

Strain the sauce

Pass the sauce through a fine strainer so that it has a perfect texture. Reserve.

Prepare the potatoes

Peel the potatoes and cut them into irregular pieces. Heat plenty of extra virgin olive oil in a pan and fry the potatoes over medium heat until they begin to brown. Drain the potatoes well on absorbent paper.

Serve the patatas bravas

Cover the potatoes with 3 tablespoons of brava sauce, leaving some parts uncovered. Sprinkle with chopped fresh parsley and serve very hot. Serve more brava sauce separately for those who wish to add more.
