Description
These Spanish style confit potatoes, also known as 'poor man's potatoes', are a simple dish but full of flavour. Ideal for a quick weeknight dinner or as a side dish to any meal. The key is slow cooking in oil, which leaves them tender on the inside and lightly golden on the outside. I prepare them often because they are economical, easy to make and always a success. Perfect for vegetarians and lovers of Mediterranean cuisine. A humble dish with a flavour that captivates!
Ingredients (5 ingredients)

2 piece potatoes

2 clove garlic
-
1 piece onion
-
1 pinch salt
-
1 chorro oil
Preparation (6 steps)
Peel and cut the potatoes
Peel 2 potatoes and cut them into thin slices or wedges, as preferred. Reserve.
Cut the onion
Peel 1 onion and cut it into thin julienne strips. Reserve.
Chop the garlic
Peel 2 cloves of garlic and chop them finely. Place the garlic cloves in the Thermomix bowl and chop for 3 sec./Speed 7.
Sauté the onion and garlic
Add a splash of oil to the Thermomix bowl. Program 5 min./120°C/Speed 1.
Add the potatoes and confit
Add the cut potatoes to the bowl. Add a pinch of salt. Program 25 min./100°C/Reverse rotation/Spoon speed.
Serve
Pour the potatoes onto a plate with absorbent paper to remove excess oil. Serve hot.
