Description

This creamy asparagus pasta is an absolute highlight in spring! I love making it when I need something quick and fresh asparagus is in season. Cooked ham provides a hearty note, which is wonderfully rounded off by the cream. The egg yolk at the end makes the pasta particularly creamy. A dish that simply makes you happy and is perfect for a quick lunch or dinner. If you like, you can add fresh herbs or some Parmesan on top - simply delicious!

Ingredients (12 ingredients)

  • 1 piece small Onion(s)
  • 140 g Cooked ham
  • 500 g Asparagus, white
  • Butter or Oil
  • 580 ml Water cold
  • 120 ml Whipping cream or Cooking cream
  • 160 g Pasta of your choice
  • 1 tbsp Olive oil
  • 1 slice Butter cheese or Gouda or Parmesan
  • Salt
  • Pepper
  • 1 piece Egg yolk

Preparation (5 steps)

Chop onion and ham

Put a small onion in the mixing bowl and chop for 3 sec./speed 5. Add 140 g of cooked ham and chop for another 3 sec./speed 4.

Sauté onion and ham

Put some butter or oil in the mixing bowl and sauté the chopped onion and ham for 3 min./120°C/speed 1.

Add asparagus and simmer

Peel 500 g of white asparagus, cut into approx. 3 cm long pieces and put in the mixing bowl. Simmer for 2 min./120°C/speed 1.

Add remaining ingredients and cook

Add 580 ml of cold water, 120 ml of whipping cream or Cooking cream, 160 g of pasta of your choice, 1 tbsp of olive oil, 1 slice of butter cheese or Gouda or Parmesan (in pieces) and salt and pepper to taste in the mixing bowl. Cook for 17 min./100°C/speed 1 reverse.

Put 1 egg yolk in the mixing bowl and stir in for 2 min./60°C/speed 1 reverse.
