Description

This coconut prawn pasta recipe is a dish I often prepare at home. The combination of coconut milk with fresh prawns is simply delicious and gives the pasta an exotic touch. It is a perfect dish for a quick weekday meal or to surprise your guests at a special dinner. The sauce is creamy and smooth, and the fresh coriander adds a fresh and vibrant aroma. I hope you enjoy this recipe as much as I do!

Ingredients (10 ingredients)

  • 400 gr Pasta
  • 2 latas Coconut milk
  • 1 bunch Fresh coriander
  • 20 piece Prawns
  • 1 piece Onion
  • 3 clove Garlic
  • 1 piece Butter
  • 1 piece Olive oil
  • 1 pinch Sea salt
  • 1 pinch Ground black pepper

Preparation (5 steps)

Sauté onion, garlic and prawn heads

Thermomix® Setting
7 min/248°F/Giro a la izquierda/Velocidad Cuchara 120 Reverse

In the Thermomix bowl, add a little olive oil, the onion cut into quarters, the garlic cloves and the prawn heads and shells. Program 7 Min./120°C/Reverse rotation/Spoon speed. Press the heads with the back of a spoon to release their juice.

Add coconut milk and boil

Thermomix® Setting
10 min/194°F/Giro a la izquierda/Velocidad Cuchara 90 Reverse

Pour the two cans of coconut milk into the bowl. Season with salt and pepper to taste. Program 10 Min./90°C/Reverse rotation/Spoon speed so that the sauce simmers gently. Meanwhile, boil the pasta in a pot with plenty of salted water, two or three minutes less than indicated on the package.

Sauté the prawns

While the sauce is simmering, in a separate frying pan, melt a little butter with a little olive oil. Sauté the chopped and seasoned prawns for a few minutes until they are pink and cooked. Set aside.

Strain the sauce and mix with the prawns and pasta

Thermomix® Setting
3 min/194°F/Giro a la izquierda/Velocidad Cuchara 90 Reverse

Strain the coconut sauce from the Thermomix with a fine-mesh strainer and pour it over the sautéed prawns. Add the drained pasta and program 3 Min./90°C/Reverse rotation/Spoon speed. Stir gently so that the pasta finishes hydrating well with the sauce.

Serve with fresh coriander

Serve the coconut prawn pasta sprinkled with chopped fresh coriander. Enjoy!
