Description

This baked penne dish is a family favorite! Tender chicken pieces are combined with perfectly cooked penne pasta and a rich, creamy tomato-mascarpone sauce. The dish is then topped with a generous layer of cheddar and mozzarella cheese and baked until golden brown and bubbly. It's a comforting and satisfying meal that's perfect for a weeknight dinner or a casual gathering. I often add a pinch of red pepper flakes for a little extra kick. This dish is also great for meal prepping – it reheats beautifully!

Ingredients (12 ingredients)

  • 4 tbsp olive oil
  • 1 piece onion
  • 2 clove garlic cloves
  • 0.25 tsp chilli flakes
  • 2 can chopped tomatoes
  • 1 tsp caster sugar
  • 6 tbsp mascarpone
  • 4 piece skinless chicken
  • 300 g penne
  • 70 g mature cheddar
  • 50 g grated mozzarella
  • 0.5 bunch parsley

Preparation (8 steps)

Prepare the onion

Thermomix® Setting

Place 1 onion into the mixing bowl and chop for 3 sec/speed 5. Use the spatula to scrape down the sides of the mixing bowl.

Sauté onion with olive oil

Thermomix® Setting

Add 2 tbsp olive oil to the mixing bowl and sauté for 3 min/120°C/speed 1.

Add garlic and chilli flakes

1 min/248°F/Speed 1 120

Add 2 garlic cloves and ¼ tsp chilli flakes to the mixing bowl and cook for 1 min/120°C/speed 1.

Add tomatoes and sugar

Thermomix® Setting

Add 2 x 400g cans chopped tomatoes and 1 tsp sugar to the mixing bowl. Season with salt and pepper to taste. Simmer uncovered for 20 mins/100°C/speed 1 or until thickened.

Stir in mascarpone

Add 6 tbsp mascarpone to the mixing bowl and stir for 10 sec/speed 3.

Cook the chicken

Heat 1 tbsp of oil in a non-stick frying pan. Season the 4 skinless chicken breasts and fry for 5-7 mins or until the chicken is cooked through. Cut the chicken into smaller pieces.

Cook the penne

Cook 300g penne following pack instructions. Drain and toss with the remaining 1 tbsp olive oil.

Assemble and bake

Heat the oven to 220C/200C fan/gas 7. Tip the pasta into a medium sized ovenproof dish. Stir in the chicken and pour over the sauce from the Thermomix. Top with 70g mature cheddar, 50g grated mozzarella and ½ small bunch of parsley. Bake for 20 mins or until golden brown and bubbling.
