Description

This dish of creamy penne with salmon and zucchini is a real comfort food! The combination of fresh salmon with zucchini cream is simply delicious. Preparing it is very easy and fast, perfect for a midweek dinner when you have little time. I love it because it is a tasty way to eat vegetables and fish together. If you want, you can add a pinch of chili pepper for an extra touch. Ideal for those looking for a simple but flavorful dish!

Ingredients (6 ingredients)

  • Fresh salmon
  • Zucchini
  • Penne rigate
  • White onion
  • Salt
  • White pepper

Preparation (7 steps)

Salmon cooking

Cut the fresh salmon into cubes. In a non-stick pan, cook the salmon for 3 minutes per side over medium-low heat. Salt and pepper to taste. Set aside.

Zucchini and onion in the bowl

Cut the zucchini into 1 cm thick pieces and the onion into slices. Put the zucchini and onion in the Thermomix bowl.

Cooking the vegetables

Add 500 ml of salted water to the bowl. Cook the zucchini and onion for 5 minutes at 100°C in Stufe 1.

Zucchini cream

Thermomix® Setting
30 sec/Speed 8-10

Drain the cooked vegetables and put them back in the bowl. Blend for 30 seconds at Stufe 8, gradually increasing to Stufe 10, until you get a smooth cream. Adjust salt and pepper.

Cooking the pasta

In the same cooking water as the zucchini (adding more if necessary), cook the penne rigate according to the instructions on the package. Drain the pasta al dente.

Combining the ingredients

Pour the zucchini cream into the pan where the salmon was cooked. Add the drained pasta and the pieces of salmon. Sauté everything over medium heat for 2 minutes, mixing gently to blend the flavors.

Serve

Serve the salmon pasta and hot zucchini cream.
