Description

This spring penne with vegetables is a quick and easy dish that is ideal for student cooking. With fresh asparagus, zucchini, peas and cherry tomatoes, it is a healthy and vegetarian meal. Preparation takes only 35 minutes and yields 4 servings. Refined with Parmesan and basil, it is a delicious main course.

Ingredients (14 ingredients)

  • 300 g Penne
  • 1 Stück red onion
  • 2 Zehen Garlic
  • 1 Stück Zucchini
  • 200 g Cherry tomatoes
  • 250 g green asparagus
  • 100 g Peas - frozen
  • 2 EL Olive oil
  • 100 ml Cream
  • 50 g grated Parmesan
  • 3 EL Lemon juice
  • 1 EL chopped basil
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (5 steps)

Chop onion and garlic

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 7

Place 1 red onion, halved, in the mixing bowl and chop for 3 sec./speed 5. Add 2 cloves of garlic and chop for 3 sec./speed 7.

Prepare vegetables

Cook 300 g penne according to package directions, then catch 4 tbsp of cooking water. Halve the zucchini lengthwise and slice. Halve 200 g cherry tomatoes. Remove the woody ends from 250 g green asparagus and quarter the stalks diagonally. Thaw 100 g peas.

Sauté vegetables

3 min/248°F/Speed 1, 5 min/248°F/Speed 1 120 Reverse

Add 2 tbsp olive oil to the mixing bowl, add onions and garlic and sauté for 3 min./120°C/speed 1. Add zucchini and asparagus and sauté for another 5 min./120°C/speed 1 with reverse blade.

Add tomatoes and sauce

2 min/212°F/Speed 1, 2 min/194°F/Speed 1 100 Reverse

Add 200 g halved cherry tomatoes and simmer for 2 min./100°C/speed 1 with reverse blade. Add 100 ml cream, 50 g grated Parmesan, 4 tbsp cooking water and 3 tbsp lemon juice and simmer for 2 min./90°C/speed 1 with reverse blade.

Mix in pasta and peas

Thermomix® Setting
1 min/194°F/Gentle stir speed 90 Reverse

Add 300 g cooked penne and 100 g thawed peas and stir in for 1 min./90°C/speed soft with reverse blade. Season with salt, pepper and 1 tbsp chopped basil.
