Description

These vegetarian stuffed peppers are a delicious and healthy option for a quick and easy meal. I have been preparing this recipe for years and it is always a success at home. The combination of sweet red peppers with mushrooms, zucchini and onion creates a tasty and nutritious filling. The touch of melted mozzarella cheese gives it a perfect gratin. They are ideal for a light dinner or as a starter in a more elaborate meal. In addition, they can be prepared in advance and baked just before serving. A versatile and economical recipe that you will surely love!

Ingredients (7 ingredients)

  • 2 piece red pepper
  • 6 piece mushrooms
  • 1 piece small zucchini
  • 0.5 piece onion
  • 1 tbsp olive oil
  • 1 puñado grated mozzarella cheese
  • 1 pinch salt

Preparation (6 steps)

Prepare the peppers

Wash the red peppers and cut them in half lengthwise. Remove the seeds and white membranes. Reserve the bottom half of each pepper for filling.

Chop the vegetables

Cut the top half of the peppers, mushrooms, zucchini and onion into small pieces. Place the onion in the bowl and chop 3 Sec./Speed 5.

Sauté the onion

Add the olive oil to the bowl and sauté the onion 3 Min./120°C/Speed 1.

Add and cook the vegetables

Add the mushrooms, zucchini and pepper pieces to the bowl. Add salt to taste and cook 8 Min./120°C/Reverse direction Speed 1.

Fill the peppers

Fill the pepper halves with the vegetable mixture.

Gratin the peppers

Cover the stuffed peppers with the grated mozzarella cheese. Bake in a preheated oven at 200°C for 20 minutes, or until the cheese is melted and golden brown.
