Description

This recipe for fried chicken breast with Mediterranean vegetables is a protein-rich main course that is ready in about 45 minutes. The chicken breast is fried in the pan and then cooked with an aromatic vegetable mix of peppers, zucchini and tomatoes in the Thermomix®. Ideal for a filling lunch or dinner. Refined with frothed milk thanks to the MilkiMizer.

Ingredients (13 ingredients)

  • 4 piece Chicken breast fillet (à 150 g)
  • 1 piece Onion
  • 2 Zehen Garlic
  • 1 piece red Pepper
  • 1 piece yellow Pepper
  • 1 piece Zucchini
  • 400 g chunky Tomatoes (from the can)
  • 3 tbsp Olive oil
  • 1 tsp dried Herbs of Provence
  • Salt
  • Pepper
  • fresh Basil
  • 100 ml Milk

Preparation (8 steps)

Prepare onions and garlic

Peel and quarter 1 onion. Peel 2 cloves of garlic. Place the onion quarters and garlic cloves in the mixing bowl and chop for 3 sec./speed 5.

Sauté vegetables

Add 3 tbsp olive oil to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add peppers and zucchini

Clean 1 red pepper and 1 yellow pepper, core and cut into bite-sized pieces. Wash, clean and also cut 1 zucchini into pieces. Add the prepared vegetables to the mixing bowl.

Add tomatoes and spices

Add 400 g chunky tomatoes (from the can), 1 tsp dried herbs de Provence, salt and pepper to taste to the mixing bowl and cook for 15 min./100°C/speed 1. Leave the measuring cup on.

Fry the chicken breast

Season 4 chicken breast fillets (à 150 g) with salt and pepper. Heat 2 tbsp olive oil in a separate pan and fry the chicken breast fillets in it until golden brown on both sides.

Add chicken breast to vegetables

Add the fried chicken breast fillets to the vegetables in the mixing bowl and cook for a further 5 min./100°C/reverse rotation speed 1. Leave the measuring cup on.

Froth milk

2 min/158°F/Speed 3.5 158°F

Put 100 ml milk in the mixing bowl. Insert the MilkiMizer attachment and whisk for 2 min./70°C/speed 3.5.

Serve

Garnish the dish with fresh basil and serve with a dollop of frothed milk.
