Description

These pink strawberry macarons are a true spring delight! I love preparing this recipe for afternoon snacks or brunches. The combination of almond and strawberry is simply irresistible. The preparation requires a little patience, but the result is well worth it. The crunchy shell and the melting strawberry heart is pure bliss. Feel free to vary the colors and flavors to personalize your macarons. A little tip: let the macarons rest overnight in the refrigerator after assembly, they will be even better!

Ingredients (10 ingredients)

  • 10 gouttes red food coloring
  • 1 pinch fine salt
  • 1 Goutte lemon juice
  • 2 c. à s. sugar
  • 80 g almond powder
  • 150 g icing sugar
  • 70 g egg whites
  • 1 g agar-agar
  • 4 c. à s. water
  • 100 g strawberry jam

Preparation (7 steps)

Whisk the egg whites

Thermomix® Setting

In a bowl, pour 70 g of egg whites, a pinch of fine salt and a drop of lemon juice. Using the Thermomix, whisk the egg whites, gradually adding 2 tbsp of sugar and 10 drops of red food coloring. Set the Thermomix to 3 Min./Stufe 3.5 with the whisk.

Mix the powders

Sift 80 g of almond powder and 150 g of icing sugar into another bowl. Once the egg whites are whisked, gently pour in the sifted almond powder and icing sugar. Mix gently with a spatula until the mixture forms a "ribbon". This step is done outside of the Thermomix.

Form the macarons

Pour the mixture into a piping bag. Form small circles the size of a 2 euro coin on a baking sheet covered with parchment paper. Preheat oven to 160°C. This step is done outside of the Thermomix.

Let crust and bake

Let the macarons crust in the open air for 30 to 40 min. Bake for 12 to 14 min (depending on the ovens). Let cool. This step is done outside of the Thermomix.

Prepare the strawberry jelly

Thermomix® Setting
5 min/212°F/Speed 2 100

In a saucepan, mix 100 g of strawberry jam with 4 tbsp of water and 1 g of agar-agar. Bring to a boil using the Thermomix. Set the Thermomix to 5 Min./100°C/Stufe 2.

Let the jelly cool

Let the strawberry jelly cool until the desired consistency is obtained. This step is done outside of the Thermomix.

Assemble the macarons

Take a macaron. Put 1 teaspoon of jam on top. Cover with another macaron. This step is done outside of the Thermomix.
