Description

These hearty Pirozhki dumplings with potatoes are a savory main course from the Thermomix®. The main ingredients are milk, buttermilk, yeast, baking powder and flour. Preparation in the Thermomix® takes about 80 minutes and yields 13 servings. Ideal for anyone who loves hearty potato dishes and likes to bake bread and rolls themselves.

  • 125 g Milk
  • 125 g Buttermilk
  • 20 g Yeast
  • 0.5 Pck. Baking powder
  • 2 Stück Eggs
  • 25 g Oil
  • 25 g Margarine
  • 500 g Flour
  • 500 g Water
  • 500 g Potatoes (halved)
  • 2 Stück Onions
  • 70 g Butter
  • 0.5 TL Salt

Prepare yeast

Add milk, buttermilk and yeast to the mixing bowl and heat for 2.5 min./37°C/speed 2.

Prepare dough

Thermomix® Setting
5 min/Kneading speed

Add baking powder, eggs, oil, margarine and flour and process into a dough for 5 min./kneading setting.

Let dough rise

Place the finished dough in a floured bowl and let it rise covered for 30 minutes.

Cook potatoes

Thermomix® Setting
25 min/Varoma/Speed 1 Varoma

Add water to the mixing bowl, insert the simmering basket, weigh in the potatoes and cook for 25 min./Varoma/speed 1.

Keep potatoes warm

Keep the potatoes warm and discard the cooking liquid.

Chop onions

Thermomix® Setting

Put onions in the mixing bowl and chop for 6 sec./speed 6, scrape everything down from the edge of the mixing bowl with the spatula.

Sauté onions

Add butter and sauté for 5 min./Varoma/speed 1.

Prepare filling

Thermomix® Setting

Add the cooked potatoes and salt to the mixing bowl and mix for 4 sec./speed 6, transfer and let cool.

Prepare dough

Grease the work surface, place the dough on it and divide into two parts.

Form Pirozhki

Form 13 small balls from each of the two parts with oiled hands, press them flat and then place a tablespoon of filling in the middle of each.

Close Pirozhki

Fold both sides together and press the edge together well, press lightly flat and place with the seam down on an oiled surface.

Fry Pirozhki

Put plenty of oil in the pan so that the Pirozhki are half covered. Place in the hot oil with the seam facing down and fry over medium heat until golden brown on both sides.
