This homemade sourdough pizza is a delight that requires a bit of planning, but it's worth it! The sourdough gives it an incredible flavor and texture. Preparing the preferment the day before is key to a perfect result. The combination of mozzarella, creamy burrata, Italian mortadella, crunchy pistachios, and a touch of lemon is simply spectacular. Ingredients (13 ingredients)

  • 100 g strong flour
  • 5 g fresh yeast
  • 50 g warm water
  • 200 g strong flour
  • 140 g warm water
  • 10 g fresh yeast
  • 8 g salt
  • 1 piece shredded mozzarella cheese
  • 1 pieza burrata cheese at room temperature
  • 1 piece Italian mortadella
  • 1 piece lemon
  • 1 piece shelled pistachios
  • 1 piece salt flakes

Preparation (7 steps)

Prepare the preferment

Thermomix® Setting
5 Seg./Speed 3, 2 min/Kneading speed

In the Thermomix bowl, add 50 g of warm water and 5 g of fresh yeast. Mix 5 Sec./Speed 3. Add 100 g of strong flour and knead 2 Min./Kneading setting. Form a ball with the dough, cover, and let it rest in the fridge for 24 hours.

Prepare the final dough

Add to the Thermomix bowl where the preferment is, 200 g of strong flour, 140 g of warm water, and 10 g of fresh yeast. Also add 8 g of salt. Knead 3 Min./Kneading setting until you get an elastic dough that doesn't stick to your hands.

First dough rise

Remove the dough from the bowl and place it in a bowl. Cover and let it rest for 30 minutes. Knead lightly again and divide the dough into 3 portions. Let it rise again until it doubles in volume (approximately 2 hours).

Preheat the oven

Preheat the oven to 200ºC with the tray inside so that it heats up.

Stretch the dough and add mozzarella

Stretch one of the balls of dough on a baking paper, always with your hands and from the inside out, so that there are fluffy edges. Cover the center of the dough with shredded mozzarella cheese.

Bake the pizza

Take the tray out of the oven very carefully because it will be very hot. Place the dough with the paper underneath on the tray and put it in the oven for 7 Min./200°C/Speed keine.

Add the fresh ingredients

While the pizza is baking, chop a handful of pistachios 3 Sec./Speed 5. Take the pizza out of the oven and add the Italian mortadella, the burrata cheese in the center (break it up a little), the chopped pistachios, grate the peel of a lemon and finish with some salt flakes and a drizzle of olive oil.
