Description

This protein-rich vegetable pan with chicken fillet is a quick and healthy main course, prepared in the Thermomix®. With chicken fillet, peppers, zucchini and carrots, a hearty meal is created. Preparation in the Thermomix® takes a total of 35 minutes, the active working time is about 25 minutes. The recipe is designed for 2 servings and is ideal for light cuisine or as a family meal.

Ingredients (14 ingredients)

  • 300 g Chicken fillet
  • 1 Stück Onion
  • 1 Zehe Garlic
  • 1 EL Olive oil
  • 1 Stück Pepper, red
  • 1 Stück Zucchini
  • 1 Stück Carrot
  • 200 ml Vegetable broth
  • 1 EL Tomato paste
  • 1 TL Mustard
  • 0.5 TL Salt
  • 0.25 TL Pepper
  • 0.5 TL Paprika powder
  • 1 TL Herbs of Provence

Preparation (7 steps)

Prepare onion and garlic

Peel and halve onion. Peel garlic clove. Put onion in the mixing bowl and chop for 3 sec./level 5. Add garlic and chop for 3 sec./level 7. Scrape down with the spatula.

Sauté onion and garlic

Add olive oil to the mixing bowl and sauté for 3 min./120°C/level 1.

Prepare and add vegetables

Clean the pepper and cut into bite-sized pieces. Wash the zucchini and cut into slices. Peel the carrot and cut into slices. Add vegetables to the mixing bowl and chop for 5 sec./level 4.

Season and simmer

Add vegetable broth, tomato paste, mustard, salt, pepper, paprika powder and Herbs of Provence to the mixing bowl and simmer for 15 min./100°C/reverse rotation level 1.

Fry chicken fillet

Fry the chicken fillet in a separate pan with some oil until cooked. Then cut into bite-sized pieces.

Add chicken fillet and finish

Add the fried chicken fillet to the mixing bowl and heat for another 5 min./100°C/reverse rotation level 1.

Season the vegetable pan with chicken fillet with salt and pepper and serve.
