Description

This low-carb chicken and vegetable stir-fry is a protein-rich and healthy dish, ideal for a light meal after a workout or as a quick dinner. With fresh vegetables and tender chicken, it is ready in just 30 minutes and offers a delicious alternative for a low-carbohydrate diet. The recipe is designed for 2 servings and is perfect for quick cooking.

Ingredients (16 ingredients)

  • 150 g Chicken breast fillet
  • 0.5 Stück Onion
  • 1 Zehe Garlic
  • 0.5 Stück Bell pepper
  • 0.25 Stück Zucchini
  • 0.25 Stück Eggplant
  • 0.25 Stück Leek stalk
  • 50 g Mushrooms
  • 20 g Olive oil
  • 100 ml Vegetable stock
  • 50 g Cream cheese
  • 1 TL Mustard
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • nach Geschmack Paprika powder
  • nach Geschmack Herbs of choice

Preparation (8 steps)

Chop onion and garlic

Put 1/2 onion and 1 clove of garlic in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Sauté onion and garlic

Add 10 g olive oil to the chopped onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare and chop vegetables

Clean 1/2 bell pepper, 1/4 zucchini, 1/4 eggplant, 1/4 leek stalk and 50 g mushrooms, cut into coarse pieces and place in the mixing bowl. Chop for 5 sec./speed 4. Push down with the spatula.

Sauté vegetables

Add another 10 g of olive oil to the chopped vegetables in the mixing bowl and sauté for 5 min./120°C/speed 1.

Fry chicken

Cut 150 g chicken breast fillet into bite-sized pieces and fry in a separate pan with a little olive oil until cooked through. Season with salt and pepper.

Prepare sauce

Add 100 ml vegetable stock, 50 g cream cheese, 1 tsp mustard, salt, pepper, paprika powder and herbs of your choice to the vegetables in the mixing bowl. Cook for 5 min./100°C/speed 2.

Add and mix chicken

Add the fried chicken breast fillet to the vegetables in the mixing bowl and stir in for 2 min./90°C/reverse rotation speed 1.
