  • 250 g Onions
  • 200 g Apples
  • 100 g Celery
  • 100 ml Apple juice
  • 1 tsp Mustard
  • 1 tsp Marjoram
  • Salt
  • Pepper
  • 100 g Bread rolls from the previous day
  • 1 piece Egg
  • 40 g Oil
  • 200 ml Vegetable stock
  • 1 tbsp Soy sauce
  • Cornstarch

Prepare onions and garlic

Add 250g onions to the mixing bowl and chop for 3 sec./speed 5. Scrape down with the spatula.

Add apples and celery

Add 200g apples (peeled, cored and diced) and 100g celery (diced) to the mixing bowl and chop for 3 sec./speed 4. Scrape down with the spatula.

Add 100ml apple juice, 1 tsp mustard, 1 tsp marjoram, salt and pepper to taste to the mixing bowl and simmer for 10 min./100°C/speed 1.

Cut 100g bread rolls from the previous day into small pieces and soak in some water.

Add bread rolls to filling

Cut 1 kg pork belly with a sharp knife and season with salt and pepper.

Fill the apple-onion filling into the incisions of the pork belly.

Sear pork belly

Sear the filled pork belly in a separate pan from all sides until golden brown.

Add the seared pork belly to the mixing bowl. Add 200ml vegetable stock and 1 tbsp soy sauce. Cook for 60 min./100°C/speed 1.

Remove the pork belly from the mixing bowl and keep warm. Reduce the sauce in the mixing bowl for 5 min./Varoma/speed 2.

Thicken the sauce with some cornstarch (mixed with cold water) and season with salt and pepper. 1 min./100°C/speed 2.
